I made it with dates instead of raisins, but I am sure that either way it would have been just as delicious. I'm definitely making this again.

Grilled 'Fusion' Pork Chops

These pork chops are delicious! I don't normally like pork chops but our neighbours gave us some and I needed to find a way to make them good... this was perfect! We're even making it again.

Chewy Coconut Bars

YUM, you weren't kidding, you can't eat just one! These are so yummy. I did as suggested by some others and reduced the chocolate chips (to 1 c.) and increased the coconut (to 1 c.). I also only ever use barley flour and organic dark brown sugar for baking and this ruins some recipes... however this recipe worked great with these substitutions. I love how the tops of these glisten. I needed a nice bar to put on a tray for our new neighbours and I think this will be perfect.

Coconut Pecan Chicken

This is officially my favourite way to eat chicken YUM! I had a bunch of pecans and a bunch of coconut and needed a way to use them. I had this brainstorm that they'd taste good with chicken and found this recipe using the ingredient search. I took the suggestions of other reviewers - added a tsp. of curry paste to the yogurt and some garlic powder to the breading. Unfortunately I didn't have panko but I know it would just be that much yummier with panko! (I used regular bread crumbs instead).

Baked Sweet Potatoes with Ginger and Honey

I'm not sure if I got the recipe off here but I think so... at any rate this is the same recipe I use. It has become a big favourite at all holiday meals (esp. Thanksgiving, Christmas and Easter) and extended family specifically request. I use a casserole dish as well and I find that they will caramelize if they are in a thin layer across the bottom - use a wider dish/pan or make less to do this. These are truly delicious!

Chocolate Peppermint Balls

The name is, unfortunately, really misleading. I was looking for "balls" to make for my daughter's first birthday - I was going to build a pyramid. But these are, in fact, flat cookies. Delicious flat cookies, but still not balls. Oh, and I had to add milk because there was not enough moisture to form balls.
