Spinach and Orzo Salad
This is my go-to for potlucks. I usually substitute walnuts for the pine nuts, and my personal secret is to use a white basalmic vinegar.

Vegetarian Cottage Cheese Patties

Easy Skillet Chicken a la King
Definitely easy. I used fresh carrots and peas instead of the pimentos. Whipped up a fresh batch of biscuits, and the meal was done. Great worknight choice.
