French Onion Soup I

good soup, I had to change the recipe based on ingredients that I had. only problem I had was the bread was kind of soggy even though I added it, baked it, and then served it immediately.

Pumpkin Pie for Dieters

My concoction: 12 oz pumpkin puree, 1 cup skim milk, 1 package instant sugar-free vanilla pudding mix, 1 teaspoon pumpkin pie spice (I didn't have any cool whip and the pumpkin was leftover from making a pumpkin cheesecake!). This actually came out really well, had the consistency of a mousse, and was really tasty. I definitely recommend this recipe.

Quick Biscuits

Easiest recipe ever! So I didn't have heavy cream, but I had fat free half and half....it worked! I used 1 cup self rising flour and 3/4 c fat free half and half...mixed together (didn't even take out of the large measuring cup!) I didn't roll out the dough or anything, just made them like drop cookies, but pushed the dough down a little. I baked them about 6-8 min at 450. (this made 9 small biscuits)

Chocolate Peanut Butter Pie II

I used a premade chocolate crust, white chocolate pudding (mix from a box), 4 TBSP peanut butter, and cool whip. It was so delicious!!! Only about 200 cal per slice.

Baby Carrots with Dill Butter

Excellent side dish! I made some changes to reduce the calories and use the ingredients I already had......1 can carrots, 1/4 tsp dill, 1/4 tsp lemon pepper, and a few spritzes of no cal butter spray. I just mixed it together and microwaved.

Sun-Dried Tomato Pesto

my version: 4 oz sun dried tomatoes, 3/4 c fresh basil, 1/4 c fresh parsley, 1/2 small onion, 1/4 c pine nuts, 4 cloves garlic, 1 can diced tomatoes, 1 small can tomato sauce, 1/4 c red wine vinegar, 1/8 c balsamic vinegar...combine in blender and then add parmesan cheese on top. This was sooooo good!

Italian Love Cake

This is a perfect recipe for making something quick, yet elegant. I accidentally made a change to the topping..... I only used pudding mix and cool whip (accidentally skipped the milk). It turned out great...was almost like a FUDGE topping. Also, I used applesauce instead of oil for the cake mix and it turned out very moist. so good!

Stringy Macaroni

I made a lot of changes, but only to lower the calories and add more veggies. For the sauce, I chopped 1 onion, 3 tomatoes, and 1 green pepper in the food processor. I combined with 15 oz canned mushrooms and 8 oz tomato sauce. I then added pasta seasoning (basil, oregano, etc.), but did not cook. I used bowtie pasta and layered: 1/2 pasta, 1/2 sauce, cottage cheese, 1/2 pasta, 1/2 sauce, mozzarella cheese. This made 8 large servings at only 250 calories each.

Cottage Cheese Roast

I love making "meat" entrees, but I was really skeptical about this one. It turned out great though! I didn't have dry onion soup mixed or dried onions so I substituted a couple teaspons of garlic powder, onion powder, 21 seasoning salute and 1 onion instead. I chopped the onion in a food processor, strained it, and then baked it for a few minutes so it wouldn't add excess moisture. Very good recipe- will definitely make again :)

Apple Snack Squares

So tasty! Made a few changes (used applesauce instead of oil, used 1 1/2 c of sugar and mixed half the chips in with the recipe and topped with the remaining half). My boyfriend and I ate the entire batch in 2 days (while we were studying for finals....if that's an acceptable excuse). Recipe stayed very moist for those 2 days, but I suspect it would keep moist even longer. Thank you!

Roasted Garlic Cauliflower

SO GOOD! I cleaned out the fridge and instead used 1 green bell pepper, 1 italian squash, 1/2 head of cauliflower, & 3 carrots. The cauliflower definitely had the best flavor, but all were very delicious (and healthy!). Also, I forgot to stir halfway through and just did it before broiling and everything turned out perfect.

Mandarin Orange Cake I

Try this variation! Here's the whole recipe: use 3 eggs, 1 c applesauce (instead of oil), low fat pudding mix, white cake mix, 2 mangoes instead of pineapple, 15 oz can of peaches instead of oranges, low fat cool whip......3425 calories for the entire cake (285 per 12 servings). I just made the original version 5 days ago and wanted to try it again with the ingredients I already had. Both were 5/5!!

Cheesy Baked Eggplant

I know it says this dish is an alternative to a pasta dish....but I think this would get 5 stars if I would've thrown some pasta in first and then baked it. It was very good though! Also, I accidentally added 15 oz of ricotta without realizing I only needed 1/2 cup. It turned out great that way!

Amish Friendship Bread III

This is soooo good! I replaced most of the oil with applesauce, used only one apple(with the peel on), and also added 2 cups of raisins and chopped dates (a cup each). I only used half the walnuts as well. The bread rose a little more than I expected and was moist enough. Very very good!

Chocolate Chip Pistachio Cookies

I made some changes: I just made one batch of dough with only the white chocolate chips (not enough time or supplies to do it right) and these turned out great. The chips were a little gooey fresh out of the oven....very tasty. I also added 3 drops of green food coloring - perfect for the holidays.

Bread Machine Pumpernickel Bread

I didn't have any molasses so I used honey and light corn syrup to equal what should have been molasses; that seemed to work out fine. The bread turned out great, but not quite perfect. I'm sure my boyfriend won't mind me making another loaf to see if I can improve it just a little more. :)
