Thai Red Chicken Curry
This was absolutely delicious!! Restaurant quality, and so easy to make. I also added 2 tablespoons of the red thai curry, and the coconut milk goes very well with the curry and lessened the spice a bit. My 2 and a half year-old LOVED it.

Shrimp Stuffed Mushrooms
These turned out awesome!! Very flavourful, and easy to make. i think i'll try it with chicken next time.

Guacamole
Soo good and soo easy. I didn't have roma tomatoes on hand so i used salsa, and it turned out awesome. Does not stay well in the fridge over 24 hours. I will definately make this again.
