About this Cook
Mother of two teenaged boys with big, but very different appetites. I'll often cook two completely different meals for dinner to accomodate them. My challenge is to find recipes we all enjoy.

I am really enjoying just trying new things, and using my food processor and kitchenaid mixer.
My favorite family cooking traditions
My mother always made sweet potato pie for Christmas Dinner. She'd bake it the day before, so every Christmas morning my breakfast would be a slice of her homemade heaven, for which she never used a recipe. It was my father's appointed task to put the cooked sweet potatoes through the hand ricer, which required considerable strength.
My cooking triumphs
Preparing and delivering a big, hot, homemade breakfast to a very large family on the morning of a very early funeral service - on time and delicious. Also, I feel like it is a daily triumph to work more than 40 hours a week and still prepare just about everything from scratch.
My cooking tragedies
I once had an airbake cupcake tin malfunction in the oven. One of the cupcake sections literally shot out of the pan during baking, and spewed batter all over the oven.

Hash Brown and Egg Casserole
With only the slight derivation of using cooked chopped bacon along with the sausage, I followed this recipe with so-so results. The potato layer was indeed bland, as another reviewer mentioned, and the eggs seemed to disappear into the potatoes. I may tweak this with a little seasoning and more eggs.

Honey Mustard Dressing II
Perfect dip for my crispy fried chicken "balls" - tenders cut into 3 or 4 pieces coated in egg wash and seasoned flour.

Sweet Potato Pie I
As the daughter of a woman who made excellent sweet potato pie by feel - no recipe, no measuring - I made this with the following reviewer suggestions: I pre-baked the crust, but wish I hadn't - it was a little too crispy, I subbed brown sugar for half the white - glad I did, but could have reduced total sugar by 1/4, added a tablespoon of fresh lemon juice and a pinch of cloves and I used evaporated milk. A tad bit sweet, but a darn good pie. After years of trying, I gave up trying to replicate my mother's pie and followed the Libby's pumpkin can recipe, using fresh sweet potatoes. This pie is better. Also - I always rice my sweet potatoes so that they are smooth and virtually string-free. The Libby's uses no butter and makes a very thin batter. **UPDATED REVIEW - my initial comments were made after only briefly cooling the pie. Once it had cooled and set overnight, the sweetness was magically perfect!
