Skillet Enchiladas
These were good. I'm a vegetarian, so I made them with Morningstar Farms vegetarian crumbles. I added some cilantro to the meat sauce. One oversight though...the instructions mention taco seasoning, but it's not in the ingredient list, so I added salsa to the filling. The family liked them.

Black Bean and Salsa Soup
For me, this was not as amazing as most others said. Very simple and good nutritional value, however, it's hard to get the family to eat something so visually unappealing. But I know they're black beans, so that's just the way it is. Probably won't make this again, but thanks!

World's Best Lasagna
The name fits! Made a few changes after reading the reviews; soaked noodles in hot water, no need to add water to the sauce, only simmered for 30 minutes, put all the parsley in the sauce, used fresh basil, mixed the parmesan in with the ricotta and only used 2 tsp. of salt in the sauce, none in the cheese mixture. Will use even less salt next time, but it was delicious. No more bottled pasta sauce for me!
