I'm a music education student from Pennsylvania. In the summers I live with my amazing fiance in London. I love music, animals, crafty projects, and of course cooking.
My favorite things to cook
Anything with eggplant. It is my favorite ingredient. I probably also eat chicken every day. I really like to create healthy recipes. I also like to take my family's traditional recipes and make them healthier. I cook a LOT of Italian food, but also some Chinese/Indian/Mexican.
My favorite family cooking traditions
I grew up in an Italian family, and almost everyone in my family is an amazing cook. My favorite family recipes are Chicken Marsala, Lemon Chicken, Eggplant Parmigiano, and my mother's Marinara Sauce.
My cooking triumphs
My biggest accomplishment in cooking was learning to make chicken curry! I had so much trouble learning to cook Indian food, but now I'm getting quite good at it.
My cooking tragedies
I haven't really had any cooking tragedies that I can remember. When I was 15 I could only make home fries and sautteed zucchini... But once I became interested in cooking I just kept getting better and better. No true disasters.

Chicken Broccoli Ca - Unieng's Style
This is such an excellent base for chinese stir fries. After making this recipe for a while, which is absolutely delicious as is, I was able to just make great authentic-tasting chinese dishes freehand. No recipe necessary! It is great. One thing that I recommend is to thinly slice the chicken, WITH the grain, not against. This makes the chicken soooo much more tender! You wouldn't believe what a difference it makes. It is how most chinese restaurants slice their chicken. Also, always make sure your wok is VERY hot!!! So important... Excellent recipe! 5+ Stars!!!

Best Chocolate Chip Cookies
Um, I don't know what it is different about this chocolate chip cookie recipe that makes it so amazing... It doesn't seem any different from the ones I've used in the past, but oh my goodness, I can't believe how good these are. Perfect crispy edge and soft chewy middles. The 10 minute cook-time was dead on! and the cook-time always seems to be off when it comes to cookie recipes... I would rate this 100 stars if I could!

Chicken Tikka Masala
This is the best Indian recipe I have ever found. It is just foolproof (as long as you only salt to taste...)! I never feel like grilling the chicken, so I just cook it on the stove top and it still comes out great! I also never use THAT much cream. It just seems a bit excessive and tastes just as good with about half of it. Usually serve it with either roasted eggplant or zucchini, just b/c they're my favs. :)
