I used to eat whatever I could find and microwave. But after being married recently I find myself cooking for a husband and a very picky eight year old. I'm always looking for quick and easy dinners that taste good and are kid and budget friendly.

I love to bake things - casseroles, brownies, you name it!
My favorite family cooking traditions
My grandma always made at least two kinds of meat, a thousand side dishes, and at least three kinds of dessert whenever we came over. She could make ANY vegetable taste good! She never used a recipe either.
My cooking triumphs
I can cook one dish that my stepdaughter likes - meatballs.
My cooking tragedies
I made a whole chicken (okay, it was called "engagement chicken") for my boyfriend at the time and when it turned out horrible I started bawling.

Sunshine Chicken
Super easy. The sauce got a little greasy because of the fat from the skin but the chicken was really tender and my husband loved it.

Easy Lasagna II
Good and easy recipe for lasagna. I used a 24 oz. container of cottage cheese and cut back on the mozzarella. On the advice of another reviewer I just used regular lasagna noodles but they came out chewy. Next time, I'll use the no boil-not the fault of the recipe.

Overnight Tuna Casserole
I'm rating it a five because the flavor was good and it wasn't the fault of the recipe that mine didn't turn out. Just wanted to warn other cooks - I subbed medium wide egg noodles (that's what we've always used in our tuna casseroles) and it didn't work at all - the noodles fell apart and the casserole was really soupy. Again, not the fault of the recipe! I'm going to try the recipe as written next time!
