Pumpkin Curry with Lentils and Apples
I used butternut squash instead of pumpkin - but otherwise followed the recipe to the letter. It was a very thick chunky stew and tasted good. The apple chunks were really great - I think next time I'll add some more apples. Maybe replace some potatoes with apples? Also I think a splash of cream or coconut milk would really help this soup go from good to great.

Curried Apple and Leek Soup
This soup was great!! I followed the recipe to the letter except I used cream cheese instead of yogurt. While cooking, adding 3 cups of vegetable broth didn't cover the leeks & veggies, and I was worried that I'd have to add some water -- but I threw the top on and kept checking it and it cooked down perfectly. My neighbor says this one is worth 6 stars. :) I'll definitely make this one again!

Apple Coffee Cake
Oh my goodness this was a disaster. First of all, it fell apart. Yes, I let it cool in the pan for 15 minutes - it stuck to the pan (yes, I greased it) and fell to pieces when I flipped it over. (Not a problem for my kids, they don't care what it looks like.) It really didn't taste that great. The batter parts don't have any spices in them (easily fixable, I know) so it was very bland, except where the apples were. The cake was also very dense - not in a good way.. just dense. One last thing, It took a long time to be done. Like an extra 15 minutes before the stick came out clean. It wasn't terrible. The recipe has potential... but this wasn't great as it was and I don't think I'll make it again.
