Fabulous Cilantro Pesto
I used pine nuts, and lime juice instead of vinegar. I liked this recipe although 5 cloves of garlic is WAY too strong. My husband took one bite and said that the amount of garlic was burning his mouth. He wouldn't eat anymore so now I've just wasted 1 lb of pasta. I would think 2 cloves of garlic is enough, especially since you're eating it raw. This is the first time I've made pesto with cilantro though and am pleased that there are other alternatives to basil based pesto which can be more expensive. Maybe next time I'll try the walnuts or pecans since they're cheaper than pine nuts.

Satiny Chocolate Glaze
Yum! I didn't have corn syrup so instead, I used 1 tbs sugar and 1/4 tbs water. It worked just fine! At the suggestion of others, I also made this in the microwave. I put it in for 30 seconds then stirred, another 30 seconds then stirred, then another 30 seconds and used a whisk to ensure the smooth texture. This glaze was a bit thicker than I thought it would be and when it cooled on the cake, it was almost like a fudge consistency. Because it wasn't as thin as I thought it would be, it didn't quite trickle down to the bottom part of my cake but that's okay! It still tasted great and I'll definitely use this one again!

Too Much Chocolate Cake
This cake is awesome!! I followed the recipe without making any changes. Well, the only thing I did was to toss the chocolate chips in a little bit of flour before adding them to the batter. This prevents the chips from sinking to the bottom, like some people have noted. I used the Satiny Chocolate Glaze recipe from this site to pour over the cake and then dusted the top with powdered sugar. For the glaze, if you don't have corn syrup, I just used 1 tbsp white sugar and 1/4 tbsp water instead. It turned out just fine! My husband said it looked store-bought and my brother-in-law asked to take some home for later. Since my oven is so old and unreliable, I did have to bake it for about 15 minutes longer than stated. Excellent recipe and I'll definitely make this again!
