Fra Diavolo Sauce With Pasta
Very good, quick and easy, and healthy! We did use canned tomatoes as the fresh tomatoes aren't quite ripe in our stores but thought it tasted great anyhow. I can see that fresh tomatoes would be even better. Even so, definitely loved this recipe. Paired well with green salad and a glass of red wine.

Portobello Mushroom Burgers
Excellent! I used fresh rosemary and oregano because that is what I had around, but followed the recipe from there. It was delicious. My husband was not so excited about this recipe (he told me later) but ended up really liking it. I think this is something we will make again for a quick and healthy week night dinner.

Catherine's Spicy Chicken Soup
I have made this recipe twice now and it just gets better! My husband loves it! The first time I made it I used chicken as called for, but the second time I used left over Turducken from New Year's. Both were delicious. I am sure any left over poultry would work fine... or shred a rotisserie chicken if you don't have time to prepare the recipe as written. Also, I have not added the canned whole tomatoes and have not missed them. I felt there was enough tomato without that addition. I think the only other thing I add to this recipe is crushed tortilla chips to the top along with a bit of sour cream - yum!
