About this Cook
I am an educator who loves to cook. I get recipes from Allrecipes all the time, and sometimes I bake so much my husband actually gets tired of me baking. I WILL own a bakery one day, lol.
My favorite things to cook
I loooove to bake. And being from Texas, I loooove Tex-Mex food. I love cooking tacos, enchiladas, homemade refried beans, salsa, nachos. I also love to bake like every other day, which is much too much.
My favorite family cooking traditions
Family Thanksgiving dinner. I have not attempted a whole turkey yet, but I do believe I will soon.
My cooking triumphs
The first time I made homemade refried beans (used bacon grease, too lol). Yummy! They tasted pretty authentic. Also, whenever my husband says "mmmm' while he's eating something I cooked, I call that a triumph.

Scrumptious Penuche Frosting
In "my version" of this popular southern recipe, if you do not use a hand mixer, it is important to use sifted powdered sugar to make sure you have smooth frosting. *Edited to add*: It is also very important to let the caramel cool to lukewarm before adding the powdered sugar, so it can thicken sufficiently. Enjoy.

Magic Cookie Bars II
These are the bomb! I think adding some milk chocolate on top is a MUST! It makes it so decadent. I toasted my coconut a bit before adding it because I'm not a fan of chewy coconut. I also omitted the walnuts because of personal choice, and I didn't have any butterscotch chips, but they were still so good.

Maria's Stuffed Chicken Breasts
I'm giving this 5 stars because my husband enjoyed it. I think chicken breast is dry in general, but he said this was juicy and tender. For me personally, I would give it 4 stars because chicken breast is not my favorite. I think I would like this dish better with chicken thighs. Anyway, the filling was yummy. I saved money and made it with cottage cheese. I put cottage cheese, spinach, egg, parmesan, salt, and pepper in a food processor and processed it. It was yummy. I also added a bit of mozzarella cheese. I simmered the sauce with some spices, and I cooked the chicken covered in foil without the mozzarella and then the last 10 or so minutes of baking I removed the foil, added the cheese, and baked.
