I am 26 years old, married to a wonderful man...I work for the ARC of Clarion County. I serve as a mentor for a 30 year old non-verbal autistic man. I like to read, watch movies and cook/bake.

I like to try new recipes, I bake bread every week, I like to make stir-fry and healthy foods.

My mom was always cooking or baking something. I learned a lot from her. I have taken the traditions I learned and expanded on them.
My cooking triumphs
Teaching myself to bake bread-it was hard at first, and I learned to enjoy it.
My cooking tragedies
There haven't been many...just a few screw-ups.

Zucchini Patties
These were good! A different way to eat up the zucchini. We ate them with chunky marinara sauce. I used 1/2 bread crumbs, 1/2 flour and fried them in olive oil.

Erin's Indonesian Chicken
I loved this recipe!! I got some fresh green beans through my CSA, and wasn't sure what to do with them, since I have disliked green beans all my life. I found this recipe and figured with the sauce and the chicken, they would be tolerable....Well, I ended up having seconds!! It was delicious. After simmering the sauce, I added it to the skillet with the chicken and beans...then I sliced the green onion and stirred it in. Served over brown rice. AWESOME!!

Taco Pizza
This pizza was great! Used my own pizza crust recipe, substituted taco sauce for the tomato paste and water, used green onion instead of regular onion, added shredded lettuce, chopped tomato, and sour cream to the top! Will make again for sure!
