Blueberry Zucchini Bread
I made exactly as stated, except I put into 2 regular loaf pans instead of 4 small loaf pans. I wasn't sure how long to bake, so I just kept testing with a toothpick. Took about 15 extra minutes. They were delicious! The blueberries added just the right amount of zing. I will make again, trying in muffin cups so I have more control over serving size. YUM!!!

Penne Pasta with Spinach and Bacon
I made with whole wheat penne, and used a pound of bacon as other reviewers suggested. I don't think a whole pound of bacon is necessary (or very healthy), so next time I will use less. I did also add about 1 1/2 tsp of ital. seasoning with the spinach into the tomato mixture, and next summer we will try it with fresh basil from the garden. I put in 2 large handfuls of fresh baby spinach, and wish I had thrown in one more...other than that, even my picky 13-yr old had 2nds!!!

Squash Casserole I
I was given a huge zucchini and wondered what to do with it....this was the perfect answer! my kids liked it ( a plus), we found it to be a light, wonderful side to our pork chops. I would reccommend! Yummy!!! I halved the recipe because I wasn't sure how it would go over, next time will make the full recipe as it was just a good the next day! Thanks for the great recipe :)
