About this Cook
I am big into health and fitness! I was very competitive in track for twelve years and still work out a lot. Most people watch TV when they are bored, I go running or hiking or to the gym. :) Now that I have a little more time, I am trying new recipes and new foods.
My favorite things to cook
Healthy meals -- low fat and low carb! I like to cook a big batch on Sunday so that I have lunches for the week.
My favorite family cooking traditions
My grandma's salad dressing, her mock filet of beef with red sauce; my aunt's twice baked potatoes and her potato salad; my other aunt who has her own website and is always trying something new; my dad is fabulous at grilling and making salsa.
My cooking triumphs
Willing to try new recipes and my attempts to make recipes healthier.
My cooking tragedies
Nothing really, just a few dishes that were a bit bland.

Spanish Flan
My first time making flan and it tasted great! Carmelizing the sugar took a lot of patience, and I didn't do the best job, so I'll have to work on that next time. The only other problem I had was getting it out of the pan... I made it in the evening and once it was cooler, I put it in the fridge for the next day. I had to soak the pan in warm water to loosen up the carmel before I could get the flan to come out.

Chili-Lime Chicken Kabobs
Great! Made these Saturday for a dinner party and everyone loved them. Flavors were great, cooking time was right on with the grill. For veggies, I used zucchini, onions, and bell peppers.
