Spinach Lentil Soup
I loved this recipe! I didn't have some ingredients on hand and I'd never cooked lentils before, but I managed to pull through and the delivery was superb. I started with two teaspoons of minced garlic sauteed in a few tablespoons of extra virgin olive oil with onions, one chile pepper, a few pinches of ground cumin, and some diced carrot. After the onions looked a bit translucent, I added the lentils and water. I substituted diced tomatoes for salsa, and did add some more mild peppers of some kind. Seasoned with a bit of salt, dill weed, and basil. Brought it all to a boil, then turned the heat down and simmered for 50 minutes, then I added broccoli (since I had no spinach on hand) and cooked it for around 10 minutes or so longer. It turned out delicious! I am excited to make this again when I get a chance to get the spinach! Though, I will not add salsa, I prefer to use tomatoes and season it myself! A delicious recipe!

Rich and Creamy Tomato Basil Soup
This soup was amazing! We ate it up. I did change a few things 1) I sauteed a little garlic and half of an onion in extra virgin olive oil for about 5 minutes, 2) I added two big cans of chopped tomatoes and a large portion of basil leaves and brought them to a boil, reduced the heat and simmered for an hour 3) I didn't have any tomato juice, but I did have to add some veggie stock. 4) Instead of heavy whipping cream I used fat free half and half. There is no doubt that the heavy cream tastes better, but it also adds a tremendous amount of fat to a delicious meal--the fat free half/half tastes great, there is just a definite difference. I also added just a few tablespoons of reduced fat butter. My boyfriend and I ate it up with grilled cheese sandwiches.

Japanese Chicken Wings
These were amazing! I didn't bread them, and I marinated them overnight in the sauce. I also thickened the sauce on the stove and added corn starch to aid the thickening process. My friends loved this! We had edamame, sushi, and these hot wings in a japanese themed dinner party.
