Santa Fe Wild Rice Soup

I used less celery and onion and probably a little more rice. EXCELLENT for a cold night. Thick and yummy with crusty bread and butter on the side. Kids didn't complain too much either and it was nice to have a meat-less meal.

Alaska Salmon Bake with Pecan Crunch Coating

Excellent recipe! I put this meal together and had it in the oven quick!! Great fast recipe for a spectacular looking (like you worked all day) meal! Kids loved it too and it left-overs were still yummy too, but at a cooler temperature so the fishiness wouldn't come through. Will make again, thanks!

Chicken Pesto Paninis

This panini was great in flavor and easy because of the already-made pesto. Only thing I would change would be to use sliced chicken because the diced chicken tended to make it messier to eat because it kept falling out. VERY good though and will use again.

We loved this recipe!!! For variations we used different frozen fruits and decided we always liked the banana added to it. We NEVER added the sugar and the kids loved it!

Caribbean-Spiced Roast Chicken

This was a VERY easy recipe! I didn't have cayenne, so I used red pepper flakes too (@ 1 tsp). My kids loved it because it was so moist. I would have kicked it up a notch if it were for just me. As a busy mom..this was easy and yummy! I did have to bake it about 10 minutes more than what was said even with my thermometer. Try it!
