Blackberry Cobbler
I've never made cobbler before, so I was a little intimidated, but thought I'd give it a shot after picking copious amounts of blackberries today! It was super-easy and tasted delicious! I didn't tweek a thing. I'll definately keep this on file. Thanks for sharing.

Yummy! It does have a bit of a kick (equivilant of say, a 3 star), so I'd suggest backing down on the cayenne a tad if you can't tolerate the heat. This is the first indian dish I haven't bombed thus far.... so I definately count this as an easy meal! Relatively cheap, too. If you already have all of the spices on hand, the rest of the ingredients add up to about $10. ***updated*** I previously forgot to mention that I omit the garam masala (it changes the flavor and I like it better without). Additionally, cutting the cayenne pepper by about half allows one to be able to taste the wonderful flavors instead of mostly just feeling the heat. Hope this helps!

Crustless Spinach Quiche
Fantastic! I will definately make this again! Variations as follows: Instead of the 3c cheese, I used 1/2 c sharp cheddar + 1 c ff cottage cheese + 1/4 c parmesean. I also added a small can of diced green chiles (but will toss in a few jalepenos next time to kick it up a notch) and tomatoes. Also thinking some feta and pinenuts would be yummy! I didn't have a pie pan so I used my 9x9 square and had to bake it 10 extra minutes. Ate the leftovers for lunch and dinner today!
