Rosemary Zucchini Sticks

This was very good! I added a little garlic powder and salt based on the suggestions. I also reduced the olive oil and doubled the egg mixture. I didn't have fresh rosemary, so I used dried, which worked just fine. I will definitely make this one again!

Grilled Salmon II

I made this exactly as written with the exception of using garlic powder instead of minced garlic. Also, I grilled it wrapped in tinfoil. It was amazing! I am not a salmon lover, but I can't wait to make this again. Probably even this week! Such a fantastic marinade.

Zucchini Herb Casserole

I gave this four stars because it was very good, but with alterations. I pretty much tripled the spices. I didn't have garlic salt, so just used garlic powder and then some salt. Also used garlic powder in place of the minced garlic. I did use the listed amount of cheese because I knew that was the only way to get my son to give it a try. He, the vegetable hater, ate everything but the tomatoes. This was the first time I could get this 14-yr-old to eat zucchini, and he even had seconds! Delicious.

Turtle Bread

The directions don't include the sugar. As I was finishing mixing, I realized I had just been following the directions without thinking. I added the sugar at the end of the mixing. The bread still turned out well, rising nicely in the oven. I substituted 1c. ww flour. So cute! Easy and tasty, too.

Old-Fashioned Potato Soup

Very good once salt is added. I didn't have chicken boullion, so I used 6 vegetable boullion cubes. Also, I used soy milk and still my son, a soy milk hater, loved it. I first rated this a "4," but had to change it to a "5" when I realized we were disappointed when we ran out of soup! Definitely will be in rotation all winter!

Oven Barbecued Chicken

This is my favorite recipe for barbecue-flavor chicken! I used sucanat in place of brown sugar. I squirted a good dose of prepared mustard in since I don't have dry mustard. I could just suck up the sauce! But the chicken turned out great, too.

Fruit Dip II

Preacher Cookies

I found this same recipe on a baby shower site. There they were called "Baby Poop" cookies. I made them for a baby shower, substituting soy milk and margarine for the milk and butter. The chunky peanut butter really added to the "theme" effect! They were a big hit, especially with those familiar with this cookie. In fact, several said these ones turned out better than their own versions! Great recipe!

Brown Sugar Smokies

Wow! These were soooo good! These were eaten so quickly at the baby shower, they were the first item to disappear. I'm not even a "smokies" fan, but I loved them. For the sugar, I used sucanat. It worked great.

Baked Potato Skins

I have now made this twice, once for my family 4th of July get-together and then for a baby shower. These were a great success with both groups. They were eaten up quickly both times. I used the "perfect baked potato" recipe from this site to bake the potatoes. I always serve the sour cream on the side because not everyone likes it.

Annie's Fruit Salsa and Cinnamon Chips

I made this for a baby shower and it was a huge hit! I used apricot preserves, and instead of the white/brown sugar I substituted date sugar. I also used Fuji apples. I wouldn't change a thing from this. The cinnamon chips were a great sweet compliment to the tartness of the salsa.

Capers and Halibut

I loved this! It left me wanting more. I used margarine instead of butter. I felt it was a bit much; will cut back next time. I didn't use juice from the capers, simply because I barely have any in the jar anyway. I didn't have halibut, so I used tilapia. Simply excellent!

French Toast and Spam Sandwiches

I gave this four stars because I find it good, even though it's Spam (as another poster said, Spam is NOT cool in the Pacific Northwest!) However my son, age 13, absolutely loved it, and he was skeptical in trying it. It is the only way he wants french toast now.

Juicy Roasted Chicken

Wow! I had a chicken I had to cook tonight, but needed an easy recipe with simple ingredients since I was so tired. I am so amazed at how delicious it is! And it was so easy! The extreme juiciness is an added bonus. Thank you so much for this recipe. A definite addition to the rotation!

Cranberry Sauce I

For Thanksgiving, I made this cranberry sauce along with a fancier one in order to satisfy the traditionalists in my family. This one was so good, I may forget the fancier one in the future! Sometimes simpler really is better. Excellent as-is.

Pebber Nodder (Danish Christmas Cookies)

These cookies are so yummy! I was looking for something new for my cardamom, and these are perfect. I halved the recipe and nearly doubled the cardamom (nearly 1 tsp for half recipe). They turned out wonderfully. I ended up cooking them about 12 minutes. Even my 12 year old son loved them, and he's a hard sell.
