Corn and Zucchini Melody
My husband and I loved this dish,I used pepper jack cheese and just mixed the cheese and bacon all together with the corn and zucchini.The pepper jack cheese really gave it a good flavor.

Brunch Enchiladas
I just love this recipe. I make it often,I even eat it cold like a sandwich. It is really good.I also added green pepper too.
