Asian Orange Chicken

Reviewed: Dec. 3, 2009
I don't often make sauces, but this one turned out well for me and my husband thought the flavor was similar to Applebee's orange chicken. He wished the breading had more substance, but I thought it was good. Make sure to mince the ginger very small-- I bit into a piece that was a bit too big and wow was that a strong flavor! ;)

Candy Crunch Pudding Pie

Reviewed: Dec. 3, 2009
This pie is amazing and takes so little time and effort to make. I made one for Thanksgiving and loved it so much that I made one just for my husband and I to eat at home. I used original Cool Whip on the first pie and Light Cool Whip on the second-- I can't tell a difference at all, so I'll use light cool whip from now on. Also, I recommend using a graham cracker crust since this pie has enough chocolate already. You can drizzle Hershey's syrup on top if you don't want to melt chocolate, and Target sells Heath candy bar bits already crushed up in a bag. Can't get much easier than that. :) Also, make sure you refrigerate this pie for at least a few hours. It's MUCH easier to cut after it's cold, and I think it tastes better chilled, also.

Basil Tomato Soup

Reviewed: Oct. 29, 2009
I'm not sure about this soup. I really wanted to like it, but once I finished making it, it mostly tasted like tomato paste. However, I used dried basil instead of fresh, half-and-half instead of whipping cream, and 3 tbsp. of butter based on previous reviews-- maybe my changes messed it up. Either way, I had to add two more teaspoons of sugar, ample amount of salt and pepper, garlic powder, and more basil to get it to be palatable at all. Still not crazy about it. I think I'll look for another recipe, but thanks for posting this one!

Mashed Potato Hot Dish

Reviewed: Oct. 25, 2009
This was a staple in my house growing up, but sans green beans. I sometimes include them and sometimes leave them out if I'm feeling particularly naughty. (What can I say? Not a big fan of vegetables in general.) Like others have mentioned, you'll probably want to spice up the beef a bit. I use minced garlic and cayenne pepper and sometimes chopped onion. I like serving this with baked beans if not using the green beans. Eating a spoonful of baked beans along with the meat and potato pie is a great combination of tastes.

Hot Cocoa Mix

Reviewed: Oct. 24, 2009
This was pretty good. I made it last year to give out at Christmas in small decorated jars. I printed directions to make one cup on small squares of card stock, punched a hole in one corner of the square, and tied it to the lid with pretty red ribbon. I used cinnamon creamer and added a little Nesquik as another reviewer suggested. My mother-in-law said it tasted better when heated with milk instead of water.

Black Bean Quesadillas

Reviewed: Sep. 20, 2009
These are really easy and filling. I use Rotel instead of salsa in the bean mixture, and we use the salsa to dip the wedges in. The filling can be a little bland though (even with using hot Rotel). The salsa dip helps in that regard.

Cheddar Bacon Hamburgers

Reviewed: Sep. 9, 2009
These burgers were good, but I didn't really taste a big difference in them and the normal burgers I make. The horseradish left a subtle flavor that I enjoyed, but I didn't taste the bacon at all-- and I used real bacon! One of my guests said he could taste it, though. I also added Liquid Smoke and Worcestershire. Due to prior comments, I left the cheese out to spare my grill the mess and just added cheese on top.

Grilled Peanut Butter and Jelly Sandwich

Reviewed: Sep. 9, 2009
I haven't eaten plain peanut butter and jelly since I first heated one of these up in the skillet. Melty goodness! I used strawberry jam, wheat bread, and smooth peanut butter.

Mom's Baking Powder Biscuits

Reviewed: Sep. 5, 2009
I made these with butter instead of shortening. They turned out well and were similar to pre-packaged mixes I've used (ie: Bisquick). It was my first time making biscuits from scratch, and these were pretty easy. I did them as drop biscuits, but next time I'll roll them to make them prettier. :) Thanks!

Baked Potato Soup

Reviewed: Sep. 5, 2009
This was pretty good, but like others pointed out, the basil really needs to be cut down. I used a whole teaspoon, but it looked like way too much. After I read some reviews, I skimmed as much of the basil out as I could. I also don't think there's any need for the salt with the bacon and broth, so I'll omit that next time. I'll also try with some mashed potatoes to make it thicker. My husband noticed the bacon flavor more than anything. Thanks for the recipe!

Never Fail Chocolate Chip Cookies

Reviewed: Sep. 5, 2009
I scaled down the recipe to make 12 cookies instead of 24 (just cooking for my husband and myself) and omitted the baking soda, but I followed the recipe otherwise. They turned out well! It was my second time making homemade cookies, but it wasn't too difficult. I did make a huge mess in the kitchen, but the end result was worth it. :) I'll keep this cookie recipe on hand for sure. Thanks!

Gourmet Caramel Apples

Reviewed: Aug. 29, 2009
Oh, these are fun to make and turn out beautifully! For anyone else who might worry about it as I did: the caramel stage didn't look as smooth as I would have liked. I was worried it would make the apple look bad in the end. But once I melted (Nestle milk chocolate) chips with the shortening and dipped the apple in it, it looked great. The chocolate went on much easier than the caramel. I lightly coated it in sprinkles and it's really cute! I'm thinking about white chocolate with crushed peppermint for Christmas gifts. :) Thanks for the recipe!

Creamy Blueberry Pie

Reviewed: Aug. 16, 2009
Wow, this pie is amazing! So warm and gooey and comforting. Just took it out of the oven and am enjoying a warm piece as I type this review. I personally used frozen blueberries, added vanilla and lemon juice to the sour cream mixture, and used brown sugar and cinnamon in the topping. To die for! I plan on making this for Thanksgiving... thanks so much for the wonderful recipe!

Burrito Pie

Reviewed: Aug. 16, 2009
This is pretty good and filling, and it's very easy to make! I scaled it down since I only have my husband and myself to feed, and I made a few changes. I browned 1 lb. beef, drained, added taco seasoning and fiesta nacho cheese condensed soup instead of taco sauce. I then stirred in a can of Rotel and a small can of sliced black olives (rinsed/drained) and let it simmer for a few minutes. I spread zesty jalapeno beans on 4 10-inch wheat tortillas and layered with the bean side down. The layers were thus: Meat mixture, 2 beany tortillas, cheese, meat mixture, 2 beany tortillas, and a final layer of cheese. I baked it in a 9 X 13 casserole dish at the temperature/time indicated in the recipe. We both liked it (even though we're not big fans of ground beef). I'll make it again probably. Thanks for the recipe!

Easy Batter Fruit Cobbler

Reviewed: Jul. 14, 2009
This was very easy to make and yielded a pretty good dessert. I like biscuit-y cobblers best, but this was very good for a cake-y cobbler. I reduced the butter, added a dash of vanilla to the batter, used fresh blueberries and canned peaches to make 3 cups of fruit, and used brown sugar and cinnamon for the topping instead of white sugar. Thanks for the recipe!

Fresh Cherry Crisp

Reviewed: Jul. 9, 2009
Very good, but I wish I had made more topping and increased the amount of oats used. Like other reviewers suggested, I cut the shortening, and I also cut the sugar to 1/4 cup because I used dark sweet cherries (frozen). I added a little cinnamon to the topping. Hope to make it with sour cherries soon. Thanks for the recipe!

Chicken Fajita Melts

Reviewed: Jul. 5, 2009
These were great, even though I had no salsa and only had hamburger buns instead of French bread. I used tomato sauce instead of juice by choice, and my husband and I both enjoyed it. I'm sure I'll make it again. Thanks for the recipe!

Tender Italian Baked Chicken

Reviewed: Jun. 28, 2009
Easy and actually stayed quite moist for baked chicken. I was skeptical about the mayo, but like others said, I couldn't taste it. I used lite mayo and added thyme, oregano, and Italian seasoning. I didn't have Italian bread crumbs, so I used garlic and herb. One problem I had was the crust sticking to the pan. Other than that, it was great, and my husband enjoyed it very much. Thanks for the recipe! I'm sure I'll make it again.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Jun. 21, 2009
Super easy and tasty. I used Jack Daniels smokehouse BBQ, and I stirred in about half a packet of dry Italian dressing mix rather than a bottled dressing.
