Eggplant Tomato Bake

Fantastic recipe! Finished dish tasted like restaurant quality. I used three eggplants thinly sliced and deep fried them. I didnt use ricotta but used mozarella instead.

Delicious Black Bean Burritos

This was the best burrito recipe I have ever used. For my family I had to make a few changes though, mostly increasing the amount. I used a package of 10 Flour tortillas, 1 Medium onion, 1 whole red pepper thinly sliced, 4 cloves of fresh garlic sliced, 2 cans of black beans, whole package of philadelphia cream cheese, cracked black pepper, left out the cilantro, added in Taco sauce on top and sharp cheddar cheese. Thanks for such a fantastic recipe, my family loves it!

Spam on the Go

My family thought this was extremely greasy and heavy. If I tried it again I would use less oil with the spam. My husband is Japanese as well but he thought this was too heavy a dish. The Spam was good and the noodles were good but not together. The spa m would go great with rice.

Room 157 Sugar Cookies

These cookies were extremely easy to make so good for people with little time to cook. They were very sticky to roll into balls so I used a pastry bag and made shapes instead. I added cinnamon and raisins and my family ate them all in one evening. Update, we have made these many times now and have made the dough into balls and when they spread out and become soft I cut them into shapes with cookie cutters. Definitely a hit with cinammon and raisins!
