I've been looking for variations on slow cooker recipes when I came across this one, and thought I'd give it a go. I tweaked it a bit to meet my south Mississippi taste buds. Here are the changes I made: I used crawfish tails instead of shrimp and I didn’t wait till the last 30 minutes to add them.
I used more cayenne and Cajun seasoning than it called for, and dumped in a ton of minced garlic. I buy pre-chopped frozen onions and I found an onion pack that had celery and bell peppers chopped in it to so I used that instead of all of the fresh veggies. And I left out the thyme.
I threw it all together and invited a friend over to test it out. We stuffed outselves silly. This is a wonderful, easy, and very filling meal. Two thumbs up!
