Cheese Ring

Good recipe but I tweaked it. I used the whole green onion and instead of the jelly recommended, I used red pepper jelly and brushed it on the outside and filled the center with it. It gave it a nice Christmasy look with the red and green together and it tasted divine. Used it for a small gathering of just five friends and we ate almost the whole thing:)

Pepper Jelly Appetizer

My mother has been serving this for years so I decided to take it to a get together. How easy is it?! A block of cream cheese on a plate topped with prepared pepper jelly. I was a little unsure when I first set in out in front of the guests...one or two actually looked at me like I was nuts, but after they tried it they were hooked. The next party, they asked if I'd bring two:)

Calico Beans

I only gave 4 stars because I made adjustments to the recipe. I only used half the amount of brown sugar and it was still a tad sweet for my taste, but the vinegar helped to cut it. I also used red wine vinegar because I didn't have any white wine vinegar. I used ground turkey and let is simmer for 1 1/2 hours on the stove instead of putting it in the over. This created more juices so I served it over brown rice and it was a hit. Not the prettiest dish in the world, but tasty none the less. Thanks.

Delicious Ham and Potato Soup

This soup was delicious and creamy even though I used skim milk. I usually use corn starch as a thickener, but I decided to follow the recipe and use the flour and butter instead and it worked out great...no lumps at all. The one thing I did differently was that I sauted my ham in a little butter to bring out the smokiness before I added it to the soup. Everyone went back for seconds:)

Poppy Seed Chicken II

it won't be dry if you add 1 stick melted butter and 1/2 cup milk to the soup/sour cream mixture; it'll have more flavor is you use either a whole chicken or 3 or 4 chicken breasts with the bone and skin and put a bay leaf or two in while you're boiling your chicken; also add poppyseeds to the soup and sour cream mixture instead of to the crust.

Tiramisu Layer Cake

I made this cake for my office and it was gone before 11:00 a.m. After reading some other reviews, I also decided on two coffee layers and one plain and i doubled the coffee. I haven't had much luck with layer cakes in the past, but this one turned out beautifully. Any imperfections are hidden by the oh so soft and creamy icing. The presentation is worth the limited amount of effort that goes into it. The only downside to the cake is the price. I only had 2 or 3 of the ingredients in my pantry. On the bright side though, I can make another one anytime I want:)

Colleen's Slow Cooker Jambalaya

I've been looking for variations on slow cooker recipes when I came across this one, and thought I'd give it a go. I tweaked it a bit to meet my south Mississippi taste buds. Here are the changes I made: I used crawfish tails instead of shrimp and I didn’t wait till the last 30 minutes to add them. I used more cayenne and Cajun seasoning than it called for, and dumped in a ton of minced garlic. I buy pre-chopped frozen onions and I found an onion pack that had celery and bell peppers chopped in it to so I used that instead of all of the fresh veggies. And I left out the thyme. I threw it all together and invited a friend over to test it out. We stuffed outselves silly. This is a wonderful, easy, and very filling meal. Two thumbs up!
