Balsamic Roasted Red Potatoes

I did something similar, and the balsamic really hit the spot! I'd add the balsamic before the potatoes got to the crispy stage next time.

Chocolate Mousse

With changes: 5 stars! I used 3 squares of semisweet chocolate and turned the tbsp of water into espresso. I also beat the egg white from the egg until soft peaks, then added a small pinch of tartar. I folded the cooled chocolate mixture into the egg white mixture, then folded that into the whipped cream mixture. Yum!

Chicken Enchiladas I

With my edits, I give it 5 stars! I halved the recipe, instead of tomato sauce I used enchilada sauce, I didn't use water, I added some cottage cheese (I had some to use up), and instead of taco sauce I used enchilada sauce for on top.

I made a half-batch, and baked them for 20 min. If I make these again, I'll only bake for 15 min and roll them thinner-maybe 3 mm thick?
