Stuffed Baby Yorkies

This was great! I used leftover pot roast and it worked wonderfully. It did take significantly longer than 12 minutes to brown, though, and I agree with the other reviewer about using a little less oil. Aside from that, four thumbs up -- my husband and I both enjoyed our meal.

Brunch Potato Casserole

This was pretty good the first day and delicious on the second. I did use low-fat mayo, 2% Velveeta, and turkey bacon; in the future, I think I'll use real bacon because the turkey bacon took on an unpleasant texture. My husband loved the combination of his favorite foods!

Slow-Cooked Steak Fajitas

These turned out even better than I expected! I added some corn and lime juice and it really added to the dish. Next time I make it, I'll use a little more cornstarch because it came out on the watery side. The leftovers make a great chili starter, too!

Potato Soup II

I'm really sorry for giving such a low review, but this turned out terribly. I tried every trick I know to improve it and I could barely eat it. If I were to make this in the future, I'd omit all of the water; it was just way, way, way too watery and bland. It was better on the 2nd day at least.

Tofu and Veggies in Peanut Sauce

This has become a staple in my household! It's a very versatile recipe, so this is a great way to use up those veggies -- I love throwing in carrots, water chestnuts, and anything else I've got on hand. Unfortunately, my husband doesn't like tofu nearly as much as I do, so I generally make it with chicken instead.

Ham 'n' Cheese Potato Salad

I'm extremely picky about potato salad, to say the least, but my husband and I both LOVED this! I really like to add in a little sweetness by frying up the ham cubes with a little brown sugar. Mmm. For the health-conscious: You can easily trim off a lot of fat and calories by using light mayonnaise, light sour cream, low-fat jack cheese, and extra-lean ham. It still turns out wonderfully!

Peanut Butter Vegetable Chicken Soup

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

I omitted the sauce and used this to make sweet sticky rice balls for my husband to take to work with him. He loved them! Next time I might roll them in a little coconut or sesame seeds.
