Corn Fritters

these were really good! i had some corn and sauteed leeks left over from Christmas dinner, so used them along with half white flour/half whole wheat flour----they came out terrific!

Stuffing for Slow Cooker

this did not work for me at all---not AT ALL! i used seasoned dry stuffing cubes, so didn't add the herbs and salt (as the recipe suggested) and it was tasteless until i added some salt and poultry seasoning...that livened it up a bit, but after only 4 1/2 hrs in the slow cooker (45 min on high, then on low) it was nearly burnt, hard and impossible to eat----out of all that effort and expense i got maybe 2 cups of usable stuffing which i didn't even like the taste of: nearly all of it went down the disposal since my guests didn't like it either...will move on to another recipe for stuffing i'm afraid!

Pretzel Turtles

ok, i am NOT an experienced candy maker, and i'm a natural klutz, but even i managed to make these with a minimum of fuss, and they turned out terrific!!! i used Rolos, and the little square pretzels, and gave them away to the neighbors as Christmas tokens---they slipped and slid a bit on the parchment paper, but once they were boxed up they looked really nice, and tasted wonderful! thanks for a candy recipe that even *I* can manage!

Cheater Pot Pie

this was really good, altho i changed it a bit: i had skinless/boneless chicken thighs to use up, so cut them into chunks, used cream of celery (low fat) and cream of chicken soups, added a bit of garlic powder, poultry seasoning, and chicken soup base, then topped it with crescent rolls (from a tube) laid flat (i had them to use up)---it was fantastic! my husband went up for thirds: a sure sign of a hit!

Slow Cooker Mongolian Beef

this was very good----i used boneless sirloin (it was cheaper than flank steak!) and omitted the sugar...it was still a bit sweet, but very tasty indeed; my husband loved it! i served it with white rice and steamed broccoli---very nice indeed!

Black Bean and Salsa Soup

this stuff is fabulous! i made it the other day and threw it in the fridge, i just had a bowl and it is amazing! i followed the recommendations made by BANSREEPARIKH (thank you!) but used beef stock (what i had on hand) and the juice of a whole lime (i like things tart)---it came out great! i'll be making this time and time again

this ticks all the boxes: stuff you have on hand, easy to make, quick to make, and delicious! my husband raved about the gravy...only thing i added extra was a bit of garlic powder---brilliant dish we'll definitely have again!!!

Asian Pork Tenderloin

oh my oh my, this is good!!! made only a few minor changes (used Splenda Brown instead of brown sugar, and onion powder when i discovered i'd forgotten to buy green onions), left it in its marinade for 4 days, and grilled it---it was brilliant! both my husband and i loved it, and it will be appearing on our dinner table again! thank you!!!

Marinated Flank Steak

i really liked this---i made it specifically to use for fajitas, but i got sidelined and it ended up in the marinade in the fridge for 5 days! we grilled it last night and it was extremely moist, tender, and juicy (except the end bits that my husband, the grill-master, burnt)...i had stomach surgery 3 months ago and am not supposed to eat tough meats, but i had no problem whatsoever with this, and the flavour was lovely...next time i make it, i'll forget about it again and leave it to marinate for 5 days!!

Indian Tandoori Chicken

the search for a home tandoori marinade goes on: this was not "It"...authentic it might be, but i want it to taste like the tandoori chicken we used to get at our Balti takeaway place in England...the flavour of this marinade was far too mellow, altho the chicken was nice and moist...so the search continues

Flatlander Chili

BEST HOMEMADE CHILI EVER!!! i have made this countless times, and passed the recipe on to dozens of people and everyone who had tasted it has made it their standard chili recipe...only things i change are: i use crushed tomatoes and diced tomatoes, and omit the sugar...i use a little extra cayenne just because i like stuff quite hot; this is a brilliant recipe!!! thank you!!

Crustless Spinach Quiche

this came out very greasy---i love cheese, but this was a bit off-putting...for the second try, i substituted EggBeaters, used a combination of fat free cheddar and fat free Monterey Jack cheeses, more onion, and a bit of minced garlic---that came out great, and not greasy at all

the flavour of this hummus was pretty good---i added more lemon juice and more garlic to suit...the texture, however, was very dry, no matter how much i processed it; i should have saved some of the liquid from the chickpeas and used that---i'll know for next time

Easy Never Forgotten Guacamole

nope, this wasn't it...i made this and it went bad sitting in the fridge because nobody liked it...i think it's because it's "authentic" guacamole---our unsophisticated NorthEastern palates want the stuff you find in Mexican chain restaurants, and this isn't it...i tried more salsa, some onion, some lime but nothing helped...sadly, the search for guacamole goes on

Grilled Chicken Thighs Tandoori

fantastic!!! i used boneless/skinless chicken thighs and left them to marinate for 2 days (kind of forgot about them) and then did them on the grill---wonderful! my husband raved about them...i think next time i'll add a bit of citrus (lime or lemon), and more garlic and ginger as well as some heat from somewhere...these are going to be a staple at our house!!! thank you!

Cucumber Raita

wow this was good: really, really good! i have been craving Indian food since we moved from England to the US, and this was reminiscent of the raita we used to get at our local Indian take-out restaurant in England! i used fatfree yogurt and added some fat free sour cream for body, and used Splenda instead of sugar: this will become a staple "must have in the fridge" at our house! thank you!!!!

Corned Beef and Cabbage II

i had never made corned beef and cabbage before and was a little nervous at the start, but this turned out wonderfully! it needed quite a bit of salt and pepper at the table, but otherwise was perfect---i will definitely make this again!

Easiest Teriyaki Marinade Ever

Not overly impressed with this recipe...I used boneless pork loin chops and marinated them overnight, and they still didn't taste of anything---they weren't bad, they just weren't...well, teriyaki-y! Unfortunately, I've got chicken breasts in the freezer in this marinade, so it gets a second chance, but I don't think I'll use it again unless the chicken turns out spectacularly.
