Cowboy Casserole
I made this on a camping trip last weekend. Everyone in our group of 10 LOVED it! They all (even the sister & mother- in-law) ranted and raved about it! We made it in our cast iron dutch oven in the fire. Great Flavor. I subbed Cheddar black pepper rolls that we made into bread bowls instead of the biscuits. Very handy & Fast! I doubled the batch and used honey bacon. Next time I will use a thicker saltier bacon & spicier BBQ sauce to enhance the flavor. Definate keeper!

Jalapeno Popper Spread
I made this recipe with miracle whip instead of mayo. Do not make the same mistake as I did. I think this recipe probably tastes really good if made exactly to the recipe, however it is terribly fatty. I read the reviews not to make any substitution... so I went to the store and bought mayo. Long story short when I was reading the label and seeing the 100 calories per tablespoon I freaked and subbed the miracle whip last minute. I will definately try to make this recipe again. It just sounds so good! Exactly like something all my friends would like... but I might try the half mayo and half sour cream option some reviewers have said. I simply cannot justify making this full fat.

Scalloped Potatoes and Onions
My husband and I both loved this recipe. I made it as stated plus I added approx. 1 cup leftover cooked ham. It barely fit into my 2.5 quart baking dish. I will use this recipe every time. No changes are neccessary. When we heated up the left overs my husband added some cream style horseradish to his. It added a fabulous zing. I will try adding 3 tablespoons horseradish to the whole batch next time. I also thought the cooking time could be reduced to 1:45, but maybe that is just because I sliced my potatoes quite thin. Either way this dish is absolutely great! You won't regret making it!
