Chicken Florentine Casserole

I absolutely LOVE this recipe! I, like many others, changed a few things: I first cooked some bacon in a large skillet, and set the bacon aside to crumble later. I then seared the chicken in the bacon grease & set aside. I then sauteed the onion & mushroom for a couple of minutes, then added 1 bag fresh spinach and couple cloves of fresh garlic. Place mixture in the bottom of the dish, then place the chicken on top. I did the sauce just the same, but I might use a little less Italian seasoning next time! (Maybe 1/2 - 3/4 Tbsp. Italian season.) Add the sauce and top it off with the reserved crumbled bacon and bake for 25 minutes at 350. Remove from oven and top with 1 cup mozzarella and continue baking for 10 minutes at 350. I also served it all on a bed of buttered angel hair pasta. Serve w/ side salad & crusty garlic bread! YUM!!

Baked Pork Chops I

I LOVE this recipe! I did change a few things...I fried the pork chops in the oil until the were nice & crispy, to sear in the juices. I've made this twice - once w/just cream of mushroom, and once w/ golden mushroom & cr. of mushroom, and it is MUCH BETTER w/ the golden mushroom mixed in! It gives it a much richer flavor! In a seperate skillet, I cooked one piece of bacon, then removed to crumble, and sauteed some chopped onion and fresh mushrooms in the bacon grease. (I also added some fresh garlic in the last few minutes of cooking) I crumbled the bacon pieces into the onion/mushroom mixture, and added it to the soup mixture. I believe I reduced the cooking time to 30 or 35 minutes also...these are WONDERFUL!! Serve w/ corn & mashed potatoes for a PERFECT dinner~

Quick and Easy Pizza Crust

I've tried several different pizza crust recipes, and this one is by far the easiest, AND the yummiest! My 4 1/2 year old daughter helped me make it, and we had the greatest time...I did use the bread flour instead of regular flour, and it really made a difference w/ texture - MUCH better w/ the bread flour!

Baked Ziti IV

I made this just as the recipe said, except I left out the sour cream, b/c my husband won't eat sour cream. I served with green beans & garlic bread, and this was AMAZING!! The sliced Provolone REALLY knocks this recipe out of the PARK! THANKS for sharing this one with us!

D's Famous Salsa

This salsa is very yummy, and is SO easy! I love using the stewed tomatoes for this salsa, it makes for an awesome flavor! I did use Mexican stewed tomatoes, and I added extra garlic and cilantro...I also love red onion in any salsa, it makes the flavor a bit sweeter. This is a wonderful mild salsa, but I think I will add a roasted jalapeno next time! : )

Ziti Lasagna

My family and I absolutely LOVED this recipe! I did alter a few things to our taste, but not much...I doubled the meat and onion, then added 2 cloves of freshly minced garlic. (I also left out the bell pepper.) I did everything else the same, but I did add freshly grated Parmesan to the top, and it was heavenly! I think I will try adding sliced black olives to the top next time as well! This is one of my personal faves now! : ) Thanks for sharing!

Philly Cheesesteak Casserole

I thought this casserole was great, and my kids LOVED it! (One is 3, the other is 1!) I did tweak it a bit, here's what I added: 1 green bell pepper & 1 red bell pepper, I halved the amount of pasta it called for, added black olives, I also added a couple cloves of garlic. OH, and I used Colby cheese instead of the cheddar, b/c it's what I had on hand. My children LOOOVED this one, I'll def make this again! Also, the bread crumbs I used were actually dried garlic bread I threw in the blender! YUM!

Tomatillo Salsa Verde

Mmmm! This salsa is SO yummy! We like it hot in our house, so I actually put two serrano peppers instead of one. I also added one chicken bouillon cube, and the juice of 1/2 a lime, and a little extra garlic. DELISH! Perfect for my green chile enchilada casserole, and also perfect for dipping with tortilla chips. I will double the recipe next time!

Quick and Easy Green Chile Chicken Enchilada Casserole

I LOVE this recipe, and everyone I share it with loves it too! I always use the Sargento's Mexican blend cheese, and it works out perfectly every time! I also top with sliced black olives and sour cream. (I don't add the sour cream in the recipe, b/c my husband doesn't do white condiments.) Simple and delightful!

Refried Beans Without the Refry

So easy, and so yummy! I top these with cheese, add some homemade flour tortillas, and my 2 year old LOVES them! It is very good to use chicken broth instead of water, or add a couple of chicken bouillon cubes to the water. I highly recommend, especially if you have little ones!
