Work and the evening Meal

Well, I have been back at work now since Sept. 1, 2009.  And although I love my job, and miss my kids, I think the biggest thing I miss is having time to cook.

We have been forced to switch to Slow Cooker meals.  And although have found some great recipes that fill the niche, it is not the same as fresh meals.  I have tried to do some 30 minute meals, but when I am not able to walk in the door until 5:30, once I am ready and food is cooked we are usually not eating until 6:30pm, which is too late when you have 3 kids under the age of 7.

I think if maybe I could get my act together, I might be able to reduce the time, but this is me we are talking about and I rarely realize I have an act let alone, get it together.

So my family is obligated to live the life of slow cooking during the week.  This works well for baby, since all the food comes out mushy and at time over cooked.

My weekends have become a blur of baking and rush prep for easy mornings and lunches.  And since we are moving my evenings are becoming packign adn organizing time... Hopefully in a couple of months everything will settle and life will get on a more even keel...

For now  a couple of blogs.. A Year of Slow Cooking and 365 Days of Slow Cooking.. are my friends and hopefully we will pull through.

Wow, it sounds like you have your hands full! Maybe when things calm down a little you could prepare different kinds of casseroles and freeze them for easy suppers during the week. Then you could get a break from the crockpot :@)Good Luck!

Hey Tj. Thanks for taking a minute from your crazy life (ww crescent rolls). I love reading the blogs. Regarding your crazy life/meal prep. Have you tried the Salsa Chicken? It is only 10 min. prep. I have "quick 'n easy folder in recipe box. I think each one is 15 minutes prep (a few 20 min) I am not very quick at cooking so I wanted to make it easier on me same reason you do. Your kids are so very young- it will get easier! I only have 1 blessing (child) in my life. I hope your moving goes peacefully as possible-Maureen
