Fresh Rhubarb Bread Pudding
My husbands mother used to make bread pudding which I never thought as something that great, but he loved it. So for fathers day I decided to make this one up as I had just been given fresh garden rhubarb. He was crazy for it and I also really enjoyed it. The only changes I made was used pecans instead of walnuts and tossed in a handful of craisins with the rhubarb. Today my husband came home with some day old bread in the hopes that I will make it again. I think that says it all...

Ground Beef Mexican Style
Great taste and quick to make. Did not have gound beef so used gound venison. Used a spicey salsa for some bite. Mixed bell peppers which added lots of color. Chopped up a large white onion as I did not have enough green ones(used them as a garnish instead)and fried them up with the meat. I also used a few cloves of garlic minced. Replaced the egg noodles with multigrain fusilli and used fat free sour cream to cut down on some of the damage. :o) Though I did up the cheese to a cup as others had suggested. Will be sure to make this again and next time for company....

Original Irish Cream
Made this just as the recipe calls for...WOW!!!! Just as good if not better then store bought. Perfect in coffee and sipping it straight is finger licking good...:0)
