About this Cook
I am a dietetics student at Case Western Reserve University and plan to become a registered dietician. I want to work with community nutrition efforts- particularly with implementing sustainable urban gardens. Eventually I want to earn my PhD and conduct nutrition research. I love to bake- and I love to eat (in moderation, of course!) Some day soon I am going to run away to Boston.

Patriotic Poke Cake
DJDEMARCO commented that the cool whip was an insubstantial frosting for this layer cake; I completely agree. Allrecipes.com has a awesome and simple and refreshing Cool Whip Frosting recipe: all you do is beat together 1 box instant vanilla pudding + 1 C. Milk + 1 tsp. Vanilla, and then fold in 1 tub of Cool Whip. Voila! It's that easy. And if you'd like, you could even add a tint of food coloring. :D

Magic Cookie Bars II
The coconut wasn't browning, so I baked the bars for 25 minutes and then stuck them under the broiler at low for 1-2 minutes. Broiling did just the trick- it gave the coconut a great golden color, just don't over-do it in the broiler because it can get too brown really quickly.
