Thousand Island Dressing II

This is really good. I've made Thousand Island Dressing before but not as much sweet relish. I like this recipe much better than the ones I've made before. It's simple and good and I needed to use up an extra opened bottle of sweet relish.

Lemon-Thyme Cornish Hens

Very good. I put the hens in a crockpot. They turned out tender and delicious. I strained and thickened the broth with a little cornstarch.

Crispy Turnip 'Fries'

The spices were good but I didn't like the turnips very much at all. I'll still eat the leftovers. I prefer raw turnips with salt.

Quinoa Side Dish

I will make this recipe again. I cooked the garlic with the quinoa rather than adding it at the end since it can give me heartburn. I didn't have fresh thyme on hand so I used some dried. I tossed in chopped green onions with the parsley at the end.

Chicken Curry I

I liked this recipe. I sauteed the onions spices as directed then put them in a crock pot with the chicken. I used drumsticks and thighs, bone in. I removed the skin. Next time I would use bone in breasts. I wouldn't put as much water in the pot as I did this time. I have lots of gravy.

Homemade Vanilla Pudding

I was happy to find a pudding recipe which didn't require eggs. I used reconstituted dry non fat milk, almond flavoring instead of vanilla and 1/3 cup of sugar. I mixed the dry ingredients first and then added cold milk to the pan to prevent lumps. I think this is a very good basic recipe which can easily be adapted with different flavorings. It would be richer using whole or even 2% milk but I used what I had on hand.

Homemade Black Bean Veggie Burgers

This is very good. I used a red bell pepper and a tsp of salsa because I didn't have a green pepper on hand nor hot sauce. I froze three of the patties. The patties were too soft since I didn't drain my home cooked black beans enough. I patted crumbs made from homemade French bread on both sides of one and fried it in canola oil. I didn't feel like a bun and ate it plain. I think it would be good this way with a dollop of sour cream and a little salsa on top.

Miss Beth's Yoghurt Cake

My husband and I thought this cake was very nice. Mine came out heavy. Maybe next time I'd sift the flour instead of using it right from the container. I used 1/3 cup dark brown sugar and 2/3 cup white sugar plus 2 tsp cinnamon. It was good with a glass of cold milk.

Tres Leches (Milk Cake)

I used 1 cup of milk instead of two with the condensed and evaporated milk and I was told the cake was dryer than it is supposed to be. I think I would like the cake to be more pudding like as I understand it should be. I used 3/4 cup of sugar in the topping and it was too sweet for us. If I made this cake again I'd only use 1/4 cup of sugar in the whipping cream.

Banana Nut Muffins

My husband (Mr. Picky) says I never put enough nuts in banana bread. I saw this recipe and decided to make it instead of bread. I used 1/2 cup of sugar and two whole eggs. I dumped in 1 1/2 cups of walnut halves. He gave it a five. Will wonders never cease.

Oatmeal Waffles

I thought these waffles were very good and hearty. I added a grated apple to the batter. My husband never likes anything different and commented "What's wrong with the ones you made before" meaning "Mom's Best Waffles" which are good too. I told him I wanted a change. I will make these oatmeal waffles for myself and freeze the extras next time.

Light Oat Bread

My husband and I loved this light bread. I put the ingredients though dough cycle in my machine,put it in a bread pan for the final rising and baked it at 350 for about 40 minutes. The texture is very nice.

Oat Bran Bread

This is a nice, soft white bread. I wouldn't call it a "health bread" since most of it is white flour.I used the dough setting in the bread machine. I poured the dough into a baking pan and had to wet my hands to pat it down to conform to the pan since it was very soft and sticky. I let it rise in a warm oven. It oozed over the side of the pan. If you like soft white bread and want a little fiber this would be a good choice. I prefer a heartier bread with a crunchy crust though I'm sure my husband will love it.

Mom's Best Waffles

This is a very good basic waffle recipe. It is easily jazzed up with strips of cooked bacon for bacon waffles or whatever ingredient you want to add. I used some leftover eggnog in place of the milk and used 2 tsps of sugar instead of the tablespoon called for in the recipe.

Seasoned Cottage Cheese

The Alpine Village Inn was a favorite restaurant to locals in Las Vegas. It closed now.This spread was served as an appetizer with crackers and assorted breads. I remember gingerbread being in the collection. The spread is light and tasty. I have been looking for the recipe for years and am happy to have finally found it. If you don't like the lumps you could always whir it up in a food processor. I don't mind the lumps. It would be good on a baked potato in place of sour cream.

Oatmeal Crispies

This cookie is good and crisp. I added a little more cinnamon and nutmeg. I chilled them before baking and to soften the oatmeal. My husband liked them and he is "Mr. Picky." I don't particularly like baking cookies so I used an ice cream scoop to make big cookies which took 15 minutes to bake.

Incredibly Cheesy Turkey Meatloaf

This recipe was very good. Even my picky husband liked it. I did add finely chopped onion, garlic powder and my own seasoned homemade sourdough bread crumbs.
