Moroccan-Style Stuffed Acorn Squash
Really good and really different! Made with quinoa instead of couscous. Also used apple and golden raisins as some other reviewers suggested. Yum!

Baked Spaghetti Squash Lasagna Style
Fabulous! Made in a casserole dish, put in spinach instead of olives and added 1/2 c of tomato sauce. Will become a staple in our house -- thanks for a great recipe!

Chocolate Chip Cheese Ball
WOW! Everyone LOVED this. I followed some of the other suggestions and used 1 c confectioners sugar and 3 T of brown sugar. I made 6 small balls and had to freeze them before rolling them in pecans and heath bars. Will be making this again and again!
