I recently graduated from the University of Texas. Lately I have been traveling the world, but I'm ready to get back home and start cooking for my family again. I love to bake cakes for my parents and cookies for my friends. I also love making any type of vegetarian dishes and I'm always on the hunt for more recipes!. My family doesn't really have too many cooking traditions. My maternal grandmother loves making cheese enchiladas with Ancho chili peppers as a base for the sauce - they are really great but I can never seem to make them as well as she does My most beautiful dish was the pineapple upside down cake I made for my father's birthday. The recipe was just so easy and it came out perfectly. I've never been so proud of myself for making a cake. I tried to make a pavlova for my mother's birthday but I could not get the egg whites to the right consistency. For some reason it kept coming our like a pile of mush. I tried three times to get it right but it was a disaster each time. I ended up making her a lovely strawberry trifle instead.
