Broiled Tilapia Parmesan
This recipe is a staple in our house. My kids (2 & 4) cannot get enough of it. Make sure your parmesan cheese is not old and dried out or else it will really affect the flavor of the recipie. I usually cook the fish a bit longer on each side, before adding the cheese mixture and have been known to increase the mayonaise to 1/4 cup.

Fried Onion Rings
The Best! I used Red Onions, Perrier water (instead of beer), and added cajun season salt to the flour. Very light, and flavorful!!
