Pear Banana Berry Bake

This recipe was surprisingly good. The combination of fruits seemed a little odd, but it turned out delicious. I followed the recipe as written except substituting 2 fresh pears for the canned ones, and substituting the second 1/8 tsp of cloves with cinnamon instead. The end product still tasted of cloves, and I think if I had used cloves the second time it would have been too strong for my liking. I used fresh squeezed juice from one orange for the orange juice. My kids were looking for the leftovers this morning, but their dad had already taken them to work:)

Mom's Best Pork Chops

This turned out okay for me. Not delicious, but nothing bad, either. The chops stuck to the pan after I flipped them over- I think not turning them would have been better. They also seemed crispier before I turned them. Overall, the flavor was rather bland and the finished product was a little too greasy for my tastes. Family seemed to like it a little better than me. I don't think I will make this again.

White Cake Frosting I

This icing worked great for the candy land cake I made for my daughter's 6th birthday party. I doubled the recipe, but used one less cup of powdered sugar. I also used 1 c shortening and 1/2 cup butter. Nice flavor, and stiff enough to decorate with. I would definitely use this recipe again.

Pumpkin Gingerbread

I halved the recipe because I only needed one loaf of bread. For a half recipe I used 1c white sugar and 1/2 cup brown, and I substituted a mixture of cinnamon, nutmeg, and cloves for the allspice since I didn't have it on hand. Lastly, I used 1.5 cups white flour and 1/4 cup whole wheat flour. I put it in the oven at 325 degrees (my oven cooks hot) and it took 1 hour and 10 minutes to bake. Overall the end product was a nice, moist gingerbread, with a hint of pumpkin flavor. Everyone enjoyed it, although no one raved. I would make again.

Apple Squares

These were delicious and gone in a flash. I even doubled the recipe!:) Anyway, I doubled everything except the topping and baked in a 9x13 pan. It took about 34minutes or so in the oven. Even with not doubling the topping, I still didn't use all of what I had. I would probably halve the topping, or at least cut back a little on the cinnamon. Also, I would add some more apple next time, even though I used two overflowing cups I would have liked more. I also used an apple peeler/slicer to cut my apples, but next time I would hand cut so I could leave the apples a little more chunky. Overall, great recipe!

Butternut Squash Soup

This soup was good, but I was surprised by how cheesy it was, even with only half the called for cream cheese. I followed others' suggestions about roasting the squash first, instead of trying to cut a hard squash into little cubes. Simply sliced it in half lengthwise, and put on greased pan in oven at 375 degrees for 45 minutes. Other than that, I followed the recipe as written except only using one (8oz) package of cream cheese, being a tad scant on my pepper measurements (for the kids' sake), and using base instead of bouillon cubes. The kids liked it (which was a nice surprise,) but the overwhelming flavor was cheese, not squash. I think this recipe should be called Cheesy Butternut squash soup. I can't even imagine how cheesy it would have been with two bricks of cream cheese! Anyway, overall this soup was good, but just not what I was expecting.

Quick Yeast Rolls

These were fast (as rolls go), easy, and delicious. My kids' only complaint was that there weren't enough! I followed the recipe ingredients exactly, which makes for a very wet dough, but works perfectly. I mixed in the kitchen aid for about 3-4 minutes once I added the flour, and then let rise about 45 minutes. Then I used a greased ice cream scoop to scoop dough into greased cupcake pan. (This recipe made 12 rolls for me.) I let rise about 30 more minutes, and then baked at 425 degrees for 10 minutes. Perfect:) Will definitely make again!

Peg's Summer Squash Bake

My husband and I really liked this. I did modify it a little, but just by adding a few spices. I used a little bit of garlic salt sprinkled over the squash, as well as some cracked black pepper. I spread the zucchini in a single layer on the pan, but with a little bit of overlap so I could fit more squash in. Yum!

Strawberry Pretzel Salad

Delicious! I followed the recipe exactly, except lessening the water added to the jello a little bit due to juices in some of my frozen strawberries. I cooked the crust just 8 minutes to avoid having a too hard crust. Also, I chilled the cream cheese layer for a half hour or so before adding the jello. I recommend letting the jello firm up a little while in the fridge before pouring it over the cream cheese layer if you are having a mixing problem. This was great!

Sopapilla Cheesecake Pie

Yum! If you like cheesecake, you'll like this. The cinnamon sugar topping was pretty sweet, but everyone loved it. I liked it warm better than cold. Tastes sort of like a cheese danish but with extra sugar on top.

Award Winning Soft Chocolate Chip Cookies

Really yummy cookie. Crunchy on outside and soft and moist on the inside. Baked at 325 since my oven seems to run a little hot. Halved the recipe and it still made 60 cookies. Added 1/2 tsp salt and a little extra vanilla. These were great.

These were good the first day or two, but quickly got dry and crumbly after that. The fact that they were still around for days let me know my family didn't love them. Okay, but not amazing.

Mexican Casserole

The taste of this was good. I added a little garlic to the chicken while cooking, and also a little onion powder. Used all the liquid from a regular size can of corn and also left the liquid from the beans as well. I think If I make it again I'd cut at least half of the corn water, as it was a little too runny for my tastes. I also upped the salsa a little. Good, easy, last minute meal, but nothing amazing.

Crispy and Creamy Doughnuts

First time making donuts, and despite my worries, they turned out great! I halved the recipe because we didn't need that many donuts for our family. For the rising periods I used a preheated oven to 200 degrees, and then turned off the heat before putting dough in to rise. Took abt 1 hour the first time and 40 min. the second. I also put the donuts on wax paper sprayed with cooking spray once they were cut out, so they'd be easy to get into the fryer. My only problem with this recipe was the glaze. I didn't like this consistency very much- next time I'll use this donut recipe but a different glaze recipe.
