Cheesy Chicken Quesadillas

I found this recipe years ago when I was living on my own, now I'm married with three kids and we still use it so you know it must be good!:) We leave out the chili powder (the original recipe didn't call for it) and add more salsa and cheese. Pretty messy, but mmm...mmm...good!

Self-Filled Cupcakes I

I love this recipe! I have made these multiple times and they always come out light and delicious. I follow the ingredients exactly, except using the mini chocolate chips instead of regular sized ones. When filing the cups, only fill 1/4 of the way, use 1 tbsp of filling, and then cover filling just barely with more cake batter. If you do this you'll get about 30 cupcakes. I have over-filled them before and then they aren't as pretty. Thanks for the great recipe that both adults and kids love!

Mom's Secret Recipe Beef Stew

This stew was good and hearty. I followed the recipe except I added fresh mushrooms and frozen peas. I thought the stew was a little thin, so I thickened it up with a flour water mixture. My entire family enjoyed this meal. It wasn't anything extraordinary, but a good, family staple.

Trail Bars

I followed this recipe as written, except using a mixture of almonds and walnuts since I did not have enough almonds, and leaving out the wheat germ as I did not have any in the house. The top of these bars were yummy, the base was fine, but my bars just wouldn't stay together. I even tried refrigerating them per another review to try to help with this problem, and about half of the bars simply split into two separate layers when I cut them. I was disappointed. Won't make again.

Cranberry Pistachio Biscotti

YUM! These were very easy to make and very delicious! I did make a few alterations to them: 1. Used margarine because I didn't have any light olive oil. 2. Added a tbsp of orange zest 3. Rolled cut edges in sugar before second baking. Wonderful flavor. Next time will add chopped dried apricots. I only got about 2 dozen cookies, not 3.

Pistachio Eclair Dessert

I made this exactly as written. It was really good, and couldn't have been easier. I'm only giving it four stars because it wasn't amazing or anything, but a nice, yummy, change from the usual dessert. It went over well at the church pot luck. My suggestion is to make sure you let it sit in the fridge for at least 5 hours so the graham crackers can soften up if you want a tue eclair-like consistency.

Lemon Icing

Great, easy recipe. Not too overwhelmingly lemony. Add more lemon juice if you want a strong lemon taste. I left out about a quarter cup of the sugar since I wanted it a little less sweet and a little thinner. Whipped with mixer to perfect consistency.

Pork Chops with Stuffing

We made this tonight and followed the recipe as written, except using dry stuffing in place of the bread cubes. It turned out delicious, with the pork being nice and tender and the stuffing topping nice and crisp the way I like it. This recipe is nothing extraordinary, but is a very decent, home cooked meal. We will make this again.

Salmon with Dill

I made this recipe tonight, following it exactly. My husband and I both liked it, but it wasn't totally amazing or anything. The spices all combined nicely, but we probably didn't need quite so much. I served a sour cream/mayo/dill sauce on the side and that was a good addition. All in all, a good recipe. Thanks.

Firefighter's Favorite Chocolate Chip Cookie

These cookies were yummy. I halved the recipe due to the ingredients I had on hand, and used toffee chips instead of candy bars. Per other suggestions I also added a little extra flour and lightly sprayed my pan with cooking spray so they didn't crumble coming off the pan. I found that even halving the recipe left me with 28 cookies, and that one tablespoonful of dough spreads out to a "regular"-sized cookie. This may not be my new favorite cookie, but they are really good and it's nice to have a change with the toffee in there.

Honey Wheat Bread I

I am not a bread maker, but with a ton of stored wheat I needed to learn how. I tried this recipe, doubling the yeast and honey per others' suggestions, and using mostly whole wheat flour (only 1 cup of white flour) and it turned out delicious! I thought I'd have to try a million recipes before I found one my family would like, but this one is great! We will definitely be making this again and again!

Cream Puffs

Yum! These turned out delicious! I actually had my husband buy me a cake decorating bag/kit for Christmas so I can make these again and pipe the filling in instead of cutting them as I had to do the first time. Everyone loved the final product and I had no problems baking them. Next time I will try the white chocolate pudding filling some have suggested. Great recipe.

I thought this cake was pretty good, but not amazing. Most of my family really enjoyed it, though, so I may make it again. If I go all out and make a cake, though, I want an amazing recipe! All in all, no complaints.

Pumpkin Roll Cake

Absolutely delicious! I followed the recipe exactly and used pillowcases to roll up the hot cake. Once in a while I had a little part crack on me, but nothing major at all and when you add the filling and re-roll you can't even tell. I've made these twice now for major family holiday events, and they swear this is what I'll be assigned to bring every year now. YUM! Thnaks for the recipe!

Amber's Super Stuffing

This was the first time I made real stuffing (ie. not from a box or bag.) It turned out really delicious and I received many compliments from my extended family. I did add a little extra rice and mushrooms, but other than that I followed the recipe exactly. The rice kind of disappeared into the stuffing, which was odd. I expected to be able to see it. Maybe I cooked it a little too long to start with? Anyway, it didn't poorly affect the taste at all. I will definitely make this again!

Baked Ziti I

We have made this twice now and really enjoy this recipe. I omit the provolone cheese (just to make it one less thing I have to buy since it's the only thing we don't regularly have on hand at our house,) and the second time I made it I also added some spices to the meat to jazz it up a little bit. This ziti is a lot more moist than the recipe I've used in the past, but my husband really prefers moist ziti so it's perfect for us. Thnaks for the recipe!

Sweet Pork Chops

Well, I will say that when I tasted the first bite I thought these were pretty good. But then as I kept eating there was just something about the flavor of them that I just didn't care for. I reluctantly finished my pork chop, but felt dissatisfied after doing so since I expected these to be so much better. Maybe it was the celery seed flavor? I don't know. My husband took one taste of the gravy and opted out as well. For whatever reason, we just didn't care for these. Thnaks anyway!
