Grandma's Gingersnap Cookies

Reviewed: Dec. 23, 2009
Excellent cookie!! This is the first time I made gingersnaps. I was looking for a chewy, flavorful, spicy cookie, and my search is now over!! I did make the following changes: added 1 tsp ground cloves, added 1/4 cup more flour and used 1/2 butter and 1/2 shortening (butter flavor--what I had on hand) and this turned out wonderful gingersnaps. The cookies came out flatter than I wanted, but doesn't take away from how good it taste. Next time, I think I'll try the complete butter and add more flour to lessen the flat results.

Spinach Dip with Water Chestnuts

Made this, as stated in recipe, but used low-fat mayo. Came out just fine. I served this w/plain water crackers, after chilling the dip for at least 2 hours.

Janet's Rich Banana Bread

Reviewed: Apr. 18, 2009
Moist and delicious!! Based on other reviewer's suggestions, I made the following changes: used room temperature butter, which I hand-mixed w/the sugars. I used 1/2 cup brown sugar, 1/2 cup white sugar. I added 3/4 teaspoon to the flour mixture, as well as a 1/4 teaspoon of nutmeg. I used mashed bananas (3) rather than chopped bananas. I didn't have a loaf pan, so I ended up using 2 muffin tins. Baked @ 350 degrees, for 20 mins.

Slow Cooker Chicken and Dumplings

Reviewed: Apr. 18, 2009
If my husband hadn't said this was "delicious", I probably would have given it 4 stars only. This is the first time I made chicken & dumplings. I made the following modifications, based on other reviewers suggestions: I used 1 can of cream of chicken, 1 can cream of mushroom. I used 1 frozen chicken breast and 1 thigh/leg quarter (hubby likes). I used 1 can of 10.5 oz of chicken broth rather than water, & a bit more, to get the chicken meat completely covered. Didn't really succeed 'cause the slow cooker isn't really that big. So, for the chicken meat that's not submerged in the chicken broth, I use the cream soups to cover it. I added a 1/2 teaspoon of the following: pepper, paprika, onion powder, garlic powder, & parsley (what we had on hand). I omitted the butter, but I'll probably add it the next time I make this. I used Grand biscuits (store brand--what we had on hand), which I cut into quarters, & sliced them in half, so they don't puff up as big. I added the dough about 2 hours before serving, making sure they get covered w/the broth---made it tricky 'cause they float up! I chopped up some celery, carrots and potatoes and cooked those in a separate pot. I added the veggies at least 20 mins. before serving, and I also turned off the crock pot at that point. I will probably add more seasoning as next time. This turned out better than I expected!! Definitely a comfort food & a keeper!!

Four Cheese Macaroni

Reviewed: Apr. 9, 2009
Wow, this is the first time I've made Mac & cheese NOT fr a box and this turned out better than I expected. Definitely cheesy, creamy and the flavor is just right. I omitted the egg; double ALL the cheese (including the cheese food). I mixed the melted butter into the freshly cooked pasta, then poured in the half & half/cheese food mixture, then ALL of the shredded cheese. The store didn't have shredded muenster cheese, so I ended up having to use the only thing they have: sliced muenster cheese, which I tore into little pieces. I topped it w/a plain bread crumb & parmasan cheese mixture before putting it in for 15 mins. Didn't want this coming out too dry. Broiled it for at least 5 mins (we were hungry & couldn't wait much longer). Very filling, and very much an indulgent comfort food. Definitely a keeper!

Peanut Butter Noodles

Definitely easy to prepare and fast to assemble. The taste was bland for my palate, as well as for my husband's. I added a bit of sweet chili sauce on mine and it was more edible.

Banana Nut Bread Baked in a Jar

Reviewed: Dec. 19, 2008
Changes: added an extra cup of mashed bananas. The condensation that builds up in the jar is very unappealing to look at, not to mention some shrinkage on the bread. Also, I had to more a little more than half of the batter in the jar, for this to rise close to the top. Will continue to use this recipe, but may have to switch to loaf pans.

Mrs. Sigg's Snickerdoodles

Reviewed: Dec. 9, 2007
Great snickerdoodle recipe! Followed it exactly, aside from the shortening. I used butter flavored shortening. I used a deep dish bowl to roll the cookie dough in, rather than the plastic bag technique. Wasn't messy at all. Had my lovely 8 yr old niece help me. Very tasty! My hubby liked this cookie as well, and that's enough for me to rate this a 5-star!

Made this for Thanksgiving, using a ready made crust. I added the tablespoon of flour, 2 teaspoon vanilla and cinnamon to the filling. Next time, I'll have to watch this closely. Both of the pies came out too well done.

Yummy! My m.i.l, who is not a 'sweet' drinker, loved this. Very nice as an after-dinner-dessert on a warm evening. Substituted ice w/Breyer's Vanilla ice-cream and added just a tad bit of ice. So good!
