Yummy Sweet Potato Casserole

This is excellent - a major hit at Thanksgiving. Made changes recommended by others. Baked the yams until they were sweet and gooey, added 1 tea.cinnamon,1/2 tea. nutmeg. To cut down on fat and calories, I did not add butter or sugar to the yam mixture. Yummy is right!

Easy Batter Fruit Cobbler

This is very good for a quick and easy dessert. I found it a little sweet for my tastes - next time I'll reduce the sugar a bit. Beware that its a rather thin batter, but it does firm up during baking. I doubled everything and baked it in a pie pan.

Mulligatawny Soup I

Very good soup! To cut down on fat, I sauteed the vegetables in olive oil, and pureed everything for a few seconds with an inversion blender (no flour/butter). I also felt the taste was great without cream. I threw in three cloves of garlic and a pinch of red pepper just for fun. Overall, a very flavorful soup!

Blueberry Spinach Salad

Great recipe! I used olive oil and balsamic. Sweetened it with Stevia instead of sugar. Used feta cheese instead of blue. Still was GREAT! Had more of an "adult" flavor - my nine year old twins turned up their noses. Adults loved it!

American Lasagna

A very good, basic sauce. As others suggested, I only used 1/2 lbs. hamburger, and I added a splash of red wine. Used 1 tbls. dried basil as I did not have fresh. Also added a 14 oz can of tomatoes, and only used one can of tomato paste. Made no changes to sugar/salt amounts. It turned out great!

Best Ever Pie Crust

The instructions on this were excellent - the crust was easy to make and was flaky. BUT, it had no flavor. Since I used it with a pie, it needed sugar. My husband went so far as to say it was bitter, but it was just blaaa...

Sonoma Hot and Sour Chicken Soup

This is a good and simple hot and sour soup made with ingredients I had readily available. Next time, I will either increase the broth or reduce the amount of chicken and cabbage. Its not quite restaurant quality, but good enough for a better than average soup. Perfect for colds!

Taqueria Style Tacos - Carne Asada

Oh my gosh!!! This was phenomenal - just like a $15 a plate restaurant meal! Even my picky 8 year old daughter loved it! Followed the recipe for the marinade with no changes, and grilled on my indoor grill for about 5 minutes per side for a medium rare flank steak. The relish seemed a bit strong for me, so I added chopped avocado and tomatoes, a dash of salt and pepper, and offered diced jalepeno on the side. Yummy! Did not make the salsa.

Lemon Blueberry Bread

This is SOOOO GOOD! A quick and easy sweet bread. It reminds me of the pound cakes my grandmother used to make for her garden club. Kid friendly too! I made it without the nuts.
