About this Cook
I'm a former career woman and now stay- at-home mom. I enjoy chatting with others on forums and reading books. Ever since I was a small child, I've loved to cook. I'm blessed with two beautiful daughters and doubly blessed because one of them loves to cook too!
My favorite things to cook
Mexican foods, Italian foods, and sometimes Asian-inspired stir-fries.
My favorite family cooking traditions
Grilling Copper River Salmon on the grill - Martha Stewart style with a cedar plank.
My cooking triumphs
I make great pasta salads and pasta dishes that I've made up myself. I've also discovered some wonderful recipes on this web site that have been big hits in our family.
My cooking tragedies
Once I undercooked a turkey for Thanksgiving. I thought it was thawed, but it wasn't. The outside was crisp, but the center was raw. A disaster.

Yummy Sweet Potato Casserole
This is excellent - a major hit at Thanksgiving. Made changes recommended by others. Baked the yams until they were sweet and gooey, added 1 tea.cinnamon,1/2 tea. nutmeg. To cut down on fat and calories, I did not add butter or sugar to the yam mixture. Yummy is right!

Mouth-Watering Stuffed Mushrooms
This is amazing, just as it is. Easy, cheap and a hit. Smells great too!

Apple Squares
Very good! I doubled the recipe but cut the sugar to 1 1/2 cups (total), and used about 2 cups of chopped apples. A family hit!
