Broccoli Corn Casserole

Wonderful!! I totally loved it, and would not change it at all. This was the first to go at this huge potluck our church had, and I made double the recipe!

Boiled Bagels

This was a great recipe to make bagels... but it took really long. A gallon of water was a little too much for boiling the bagels, but it did taste really good afterwards. I made 23 small bagels. :)

Reduced Fat French Toast

This was the first time I made French Toast (I always opt for lowfat) and it didn't turn out too well. It was way too soggy, and I'm not sure that's how it's supposed to be. I threw away all of it, except for one which I ate. I could taste the vanilla and the texture of the egg substitute. :(

Cinnamon-Sugar Fan Biscuits

This was OK. The directions weren't too clear about how to arrange it into the muffin pans, so I made it into little cups and also made some on the cookie sheet. The dough gave me way more than 6 (I got about 20 in the way I arranged it), but they tasted great! I'll make it again, but maybe I'll wait for a couple of months or so. Oh, I also used cinnamon sugar to save time combining sugar and cinnamon. :) Since I didnt' want to use shortening, I used 1/2 cup of applesauce and 1/2 tbsp of butter. Turned out wonderful.

Miss Betty's Super Quick Dinner Rolls

I already made 2 batches today! I only fill them up halfway in the muffin cup, and it ended up to get me 8. I also put jam in the middle, and my second batch had cheese and ham in it. I added a little more water (not milk) to the batter, so it came out more muffin like. The only thing is that I baked it longer, since there's more moisture in the batter. But definitly a keeper!!

Lighter Banana Muffins

Great! I made 'em this morning, and had two! The banana didn't cook fully since I didn't mash it up completely, and I think it tasted great! Since some family members cannot eat nuts, I substituted the nuts with the chocolate chips, and tasted better!
