Lemon Cupcakes
I made this for the first time for my boyfriend's birthday, he thoroughly enjoyed it as it was not too sweet and the lemon flavour was subtle. I made this recipe into a cake but I do think it is better as cupcakes, frosting or icing is not necessary in my opinion as it was perfect just on it's own. I reduced the amount of sugar in this recipe as well but added more lemon juice instead. Overall, I would make this recipe again; it is a very light cupcake to indulge in.

Layered Macaroni Casserole
Loved this recipe! I made this for my boyfriend. Instead of purchasing a can of crushed tomatoes, I bought fresh tomatoes and diced them. I felt this tasted a lot better then if I had used canned tomatoes. I followed the recipe exactly omitting onions and adding a handful of mushrooms instead. I would definitely make this again. My suggestion is, when baked in the oven for me it needed only 15 minutes at 325 degrees F to give the crispy melted texture at the top of the casserole. But the mixture of pasta, ground beef and mushrooms was still hot so while layering the cheese melted in the process. Definitely would add more spices to this recipe as I omitted the chilli powder as I did not have any at home.

Crispy Potato Wedges
The recipe was average, there was nothing special about the wedges. It would have been better if I had combined other spices along with the garlic powder. I'm not sure if I would try this again but next time I'd definitely bake them longer so they would be crispy. I baked mines at 400 degrees F for 40 minutes while rotating them so they would cook evenly. It wasn't long enough for me. Both my boyfriend and I thought it was just average and there definitely could be room for improvement.
