About this Cook
I've raised a family of four and created meals out of little or nothing in the lean years. I pride myself on being able to pull together a satisfying meal in a pinch when guests drop in.

Baking is my true love.
My favorite family cooking traditions
Always certain recipes my family looks for - at Christmas, gingerbread men, cheese straws,plum pudding recipe my mother made, and now this year, I've added pumpkin soup.
My cooking triumphs
I like to take a recipe and alter it to fit my family's tastes. I have a "jambalaya" that has no shrimp, but instead, turkey kielbasa and chicken.
My cooking tragedies
Only real "tragedy" was a chicken/cheese baked dish that I had doubled for a large family gathering, that I had failed to allow extra time for the additional thickness of the doubling. With everyone seated at the table, it put the meal on hold until the dish could be put back in the oven and finished cooking.

Quick Brown Rice and Mushroom Pilaf
Made this as part of a company meal and everyone thought it was delicious. The toasted walnuts add just the right amount of crunch and flavor. I followed the recipe with the following changes: added 2 full cups of broth, and instead of the Minute Rice used 2 packages of Success boil in a bag brown rice, emptying the packages right into the skillet to cook in with the other ingredients. One of my guests plans to incorporate this recipe into the buffet menu they serve at their Christmas party.

Lemon Soup
This was absolutely delicious. I had to run off copies of the recipes for my guests before they left! Only changes I made: I beat 3 large eggs (not separated)and added lemon juice to that; and used 1 pkg. of Success boil in a bag white rice opened and dumped to cook right in the broth. This is so easy and tasty. I'll defiitely be making it again and again.

Chicken Breasts With Herb Basting Sauce
I was very disappointed. Baked the chicken for 40 minutes and even tho I had basted it during the cooking time, it was dry and not very flavorful. There were no drippings to spoon over the chicken when presenting for serving.
