About this Cook
I grew up in scandinavian country, where the idea of "Thai-hot" is a foreign concept in more ways than one. I learned to cook from my mom and furthered that in college, when cooking in my apartment became very competitive. I love the outdoors and have been referred to as granola. In my spare time I camp, hunt, fish and anything related to the previously mentioned. I would be hard pressed to call myself an "expert" but I am comfortable with many things in the kitchen.
My favorite things to cook
I am always looking for the freshest ingredients possible, and enjoy a challenge. Besides grilling, I love savory cooking, especially anything requiring a sense of timing. Asian, Latin and greasy spoon are always favoerites, but being an Opportunivore by nature, I'll try anything given the opportunity.
My favorite family cooking traditions
I don't dismiss the Nordic roots, so come christmas time, I love to make lefse. Besides the holidays, my mom and I share recipes, and my favorite cooking partner is my wife. - who is a far better baker than I will ever be.
My cooking triumphs
I love cooking game - venison, upland birds and more, and to make it in new ways. Any time I can make someone enjoy a tender, juicy cut of deer or a grouse breast who professes to hate wild game is a success for me.
My cooking tragedies
Tragedies nearly happen to me all the time, I try to fix these and make it work for me. The one I could never recover from was trying to make a baked red potatoes dish and accidentally adding sesame oil instead of malt vinegar. To this day, it is a struggle to enjoy some dishes with sesame oil.

Thai Chicken Satay
I made this recently to entertain and the prep was very well suited for it. By marinading then skewering the chickend pieces I was able to tackle other dishes and throw these on the grill right when people were ready to eat. I don't keep fish sauce around muh, so substituted soy sauce - It worked out perfectly fine with it.

Italian Sausage Soup with Tortellini
This was a fantastic recipe. Due to lack of availability here, I ended up using dry tortellini with spinach and there was no loss overall - per an earleir suggestion, spinach was a nice addition. While I wouldnt not typically think to use a sweet italian sausage, it was a great compliment to the flavors - I recommend NOT cutting corners here, even if you like spice like I do. My only concern was that it definitely got hearty and thick with the tortellini added, If you like more broth, it might be advisable to add an extra 2 cups of broth as well as the water.
