Baked Salmon with Herbs

Love this! We have to bake it for less time or it is dried out. This topping would go great on tilapia, orange roughy, etc.

Poppy Seed Muffins

Reviewed: Jan. 18, 2010
Yum, yum, and again yum! I had to alter it slightly because we didn't have the right ingredients and because we don't like things too sweet. We used about 1 3/4 cups sugar--perfect. We used only 1/2 cup of oil and about the same amount of plain yogurt. It was PERFECT! We baked them for less time because our oven runs hot. The glaze is tasty but we left it on the side for anyone to add as they wished, since it added a lot of sweetness. Thank you for this recipe! I know you all dislike it when someone rates a recipe and then changes is, but isn't it nice to know you can alter it to fit what you have on hand and it's not only edible, but delicious?! We made 36.

Belles Hamburger Buns

Reviewed: Jan. 18, 2010
This made excellent, light and fluffy hamburger rolls. We are veyr excited about this recipe! I didn't really change it, although I used honey instead of sugar, just because that's what we do. (Who needs a better reason than that!) Also, some of our flour was homeground wheat, and they were still light and fluffy! We used them with BBQ pulled pork, very saucy, and they held up very well. This morning we made bread out of the recipe. Also fab! I used a breadmaker for this recipe. I did check it now and again, and it required a bit more flour, probably due to inaccurate measuring on my part. Thank you infinitely for this recipe! Delicious! Five stars!

Foolproof Rib Roast

What can I say? It worked beautifully! Of course, everyone adjusts the seasonings to their own family's preference, so there's no point in telling you what to do to please MY family. Don't be afraid to experiment with the seasonings to delight your own crew.

Key Lime Pie VII

Reviewed: Jul. 12, 2009
I am not a lime pie fan, but I truly love this pie. As others did, we juiced 20 key limes in a garlic press and used 2 cans of condensed milk. We skipped the zest for creaminess' sake. We also used a sugar free homemade graham cracker crust. (Just leave the sugar out of a regular graham cracker crust recipe--you won't notice, and if you do, then you eat WAY too much sugar!) Phenomenal! Really! We've been talking about this pie for months! (I know, we need a life, but it is really THAT good!)

Steak And Onions

Reviewed: Feb. 23, 2009
The flavors for this recipe were very good. It was a quick recipe and very simple. Since there were seven of us eating and we had to stretch the steaks, we sliced them and prepared them on a griddle instead of broiling whole steaks. We used the same seasonings, however, and the result was wonderful. Thank you for sharing.

Fudge Brownies I

Reviewed: Feb. 10, 2009
Thanks for the recipe! We made this tonight and it never quite formed properly. It was very crumbly, almost like crushed Oreos. I have absolutely no idea why this happened. That only thought I have is that we are at 2600 altitude...but really! Anyway, it tasted delicious! We sprinkled chunks and crumbles over vanilla ice cream and was that ever tasty! I will use this recipe again for that purpose! With my luck, next time it will turn out right, now that I don't want it to. Ha! Thanks again for the sundae topper!

Delicious Black Bean Burritos

Reviewed: Jan. 15, 2009
This was delicious, but, of course, we didn't stick with the recipe. Because we were feeding seven people, we added a solid pound of ground beef which we browned first, and then proceeded more or less as indicated in the recipe. While a couple of the family memebrs had it as burritos, most made taco salads with corn chips, lettuce, avocado, etc. It was very good, and my bean-phobic husband said, "Hey, did you notice I ate my beans and didn't say anything?" We all have a bit of the two-year-old in us! Thanks for a delicious launching pad!

Beefy Spanish Rice

Reviewed: Jan. 2, 2008
I don't know why, since I never even had rice at home as a child, but THIS is DEFINITELY comfort food! I've made it a few times and have varied it each time to suit the ingredients we have in the house. I've added 6 ounces tomato paste with extra water, diced tomatoes, left out the green pepper, added more water, left out the ketchup, etc., and it always turns out perfectly! Everyone eats it (hubby, 5dc: 11, 9, 7, 4, 2). One thing I do consistently is to start cooking the rice as soon as I begin browning the beef. After it's tender (15 minutes) I stir it in and serve. We've never had a problem with crunchy rice. Tonight we're having this with a nice big "make-your-own" salad bar, cornbread, and a fruit salad. I think we'll wear our PJs and eat it in front of a roaring fire--that's what you do with the truly good comfort food!

Country Chicken

Reviewed: Dec. 10, 2007
I really enjoyed this recipe. I only used half the sour cream, and homemade stock. A little salt, and everything was fine. It certainly isn't bursting with flavor, so if you don't like a more mellow chicken dish, this is not for you. It makes great leftovers. Perfect over rice.

Hamburger Soup

Reviewed: Nov. 5, 2007
This soup was great. I did add two cans of diced tomatoes just out of personal preference and because it was on hand. I have made this soup more than once, and we love it! Apart from a little quick chopping, it is not time-consuming, and it lends itself well to leftovers if you're not feeding a small army as we are. It's really a keeper, especially for lunch on cold winter days!

Delicious Ham and Potato Soup

Reviewed: Mar. 9, 2007
I must have done something wrong, because this was so salty that my children could not finish it. I diluted it to a tolerable level with extra milk and had two bowls. The flavor itself, apart from the saltiness, is very good! I will be trying this again with homemade stock instead of bouillon and without the added salt, and hopefully I will be changing my rating. Thank you for the recipe!

Chocolate Trifle

Reviewed: Mar. 9, 2007
How can this NOT be good?! With a Betty Crocker classic brownie mix, this is simple and quick. Allow time for cooling, however. We used regular whipped cream with sugar and vanilla due to the NASTY ingredients in "frozen whipped topping"--read the label! It is a rich dessert. Hubby felt it was a bit over the top--definitely not a refreshing dessert, but rather indulging! Yum!

Broiled Tilapia Parmesan

Everyone in my family really enjoyed this recipe. I personally thought it was fine, but not outstanding...could have been the fish specimen. Served with risotto. It is VERY fast to make and quite easy. Make sure EVERYTHING else is ready before broiling the fish.

Fluffy Pancakes

Reviewed: Mar. 5, 2007
The opinion among the seven us varied from 1 to 5. The hubby did not like the texture, preferring a more elastic pancake that withstands syrup saturation without crumbling. I, however, found the texture to be fine, but only drizzle syrup. The taste is good, perhaps a 4. The children all loved it.

Pumpkin Chocolate Chip Muffins

Reviewed: Feb. 18, 2007
The rating among the seven of us ranged from 3 to 5. I would, if I were you, try the recipe as written before adjusting, since some family members thought it was too spicy and some not spicy enough. We made mini-muffins with mini-chips and baked to perfection for 10 minutes. Moistness was fine as written. Tasty way to use up the pumpkin puree in the freezer from Thanksgiving! Recipe yielded nearly 24 mini-muffins. Recipe prepared by supervised 6-year-old.
