Tina's Shortbread Chocolate Chip Cookies

Fabulous melt in your mouth cookies. I suggest using mini chocolate chips and finely chopped pecans. I baked these at 275 for 60 minutes and they came out perfect.

Homemade Laundry Soap

I was contemplating making my own laundry soap for quite some time now because I haven't been happy with the commercial products. I made 3 batches of this yesterday and have since done 3 loads of laundry. I am very pleased with the results. The best part is that there is very little fragrance. However, I am still looking for a remedy to rid stinky workout clothes from BO....I think my only option is to replace the clothes at this point :O)

Sesame Pasta Chicken Salad

Decreased the oil to 1/3 cup and added diced red and yellow peppers to the mix. Will add pea pods and baby corn next time. This was really yummy.

Oatmeal Peanut Butter Cookies

Perfectly soft and chewy. I did add about a 1/3 cup more flour as the dough was a bit sticky with what the recipe called for. I baked mine for 11 minutes.

Wow! Made this as directed using Kahlua as the coffee liqueur. Refrigerated overnight. A wonderful, light and airy cake. A definite show stopper.

Soft Chocolate Cookies

A perfect chewy chocolate cookie. I added semisweet chocolate chips to the batter and opted not to sprinkle powdered sugar on top once done. I did not refrigerate the dough. I did baked on parchment paper which yielded a perfectly puffed cookie.

Shredded Chicken Tacos

I used boneless skinless chicken breasts and regular chili powder. I used flour tortillas since that is what I had but I would have preferred corn. It has a nice flavor with just enough heat to it.

Best Marinara Sauce Yet

This IS the perfect marinara sauce. I used petite diced tomatoes instead of the stewed, decreased the olive oil to 2 T. and added 1 T. of brown sugar. I blended this with an immersion blender because I hate cleaning my regular blender and it worked just fine. I simmered with cooked Meatball Nirvana meatballs for 1.5 hours and served over hot capellini. I ended up freezing some of this for a quick weekday meal also. Thanks for the wonderful recipe.

Meatball Nirvana

Finally got around to making these. YUM! I went LTH style and used dried onions instead of fresh, cut back the red pepper a tad and omitted the hot pepper sauce, 'cuz I'm a little sensitive to spicy stuff. I was very pleased with the texture and taste. I made this along with Best Marinara Sauce and served over hot capellini. Thanks for a great meatball recipe, LTH.
