Aunt Dorothy's Marinated Carrot Salad

Since just for me, I cut the recipe in half. Instead o soup, I used 2 T. tomato paste and pinch of clove. Used 1/4 c. sugar (and still maybe a little too sweet), 1/4 c. oil (plenty or me). YUMMMM!

Thit Bo Xao Dau

As written, I found it BORING. But I was inspired by some of the raters and added fish sauce, ginger and red pepper flakes. Then it was pretty good. There is (or was) a restaurant in the First National Bank Building in Dallas TX that served the best green bean dish - General something. If anyone knows that one and has the recipe, I would be soooo thrilled to get it.

Pickled Asparagus

Quite yummy. I just made them for the refrigerator, cooked the asparagus in the pickling liquid til just barely cooked, and then put in jar and into frig.

Very easy and quick. I, too, waited until after the cooking to add the cheese, but I put the nuts in with the asparagus so they could toast.

Okra, Corn and Tomatoes

I couldn't find my file, so maybe the 4 star isn't fair. I thought it was excellent however, and a great way to use okra without resorting to frying. Forgot the garlic, unfortunately.

I agree with the majority that this is 5 star. I did use lime juice, and fish sauce as recommended by another reviewer. I only had curry powder so used it and added chili garlic sauce for a little heat. Loved it.
