Pineapple Upside-Down Cake V

I don't really care for pineapple upside-down cake, but a friend asked me to make one for an office party. This was very easy and it came out great. I didn't use coconut and I used cooking spray instead of the butter. I highly recommend the butter. I almost had a disaster getting the cakes to come out without tearing them up. Everyone loved the cake and commented on how moist it was.

Zucchini Brownies

If you make this recipe correctly, it is wonderful. I would have called it a cake rather than a brownie, though, as it reminds me more of a Texas Sheet Cake. There are a few major things to remember when making this recipe. #1 - DO NOT SQUEEZE THE LIQUID FROM THE ZUCCHINI! #2 - The batter takes several minutes of stirring/folding before it comes together. People who gave it a poor review saying that the batter was like sand just didn't stir it long enough. If you follow the recipe, you will have a very moist and rich chocolate cake. I thought the icing was good, too.

Roast Sticky Chicken-Rotisserie Style

I made this today and it was wonderful. The house smelled so good. I used minced garlic in place of the onion because I didn't have one. I also didn't have time to let them sit overnight. I can only imagine how great this will be I can do that.

Famous Butter Chicken

OMG this was so good!!! How can something so simple be so dang good! I didn't make any changes to the recipe at all. I did melt the butter because I thought that was what I was supposed to do until I read thru the entire recipe. But I just poured it all over and it still turned out wonderful. I used chicken tenders because that is what I had on hand. This is so good. Did I say that all ready?

Made this last night and it was great. Real comfort food! I made no changes since it was the first time I made it. The onion and bell pepper are really key flavors, so don't leave them out. Next time I will add a can of mushrooms. I especially liked the fact that I had everything on hand to make this.

Dark Molten Chocolate Cakes

All I have to say is OMG!!! These were soooo good! And they couldn't be easier. I followed the recipe exactly. I served this with a scoop of vanilla ice cream on top. Next time I will try it with magic shell and some pecans on top as well.

Bacon Ranch Pasta Salad

I don't normally like pasta salad, but I have to admit that this one was really good. I didn't have time to make the bacon so I purchased real bacon bits. I'm sure the regular, crispy bacon would have been better and I'll try it next time. I would also add a bit more mayo, as I think I would like it a bit more wet.

Sweet Restaurant Slaw

This slaw was so easy and so good. I made it the night before so it could marinate a bit. I didn't have poppy seeds, but I think those are just for looks anyway. Next time I might add a bit of sweet pickle just because I like it in my slaw.

Mom's Zucchini Bread

This was really good! I didn't have any nuts, but I know they would have only made this better. I didn't make any changes. I made one regular size loaf and four mini loaves. Even my husband who said, "You're making what with zucchini?" ate a whole mini loaf by himself. This was even better the next day. Next time I might even try some chocolate chips in this!

Garlic Bread Fantastique

This stuff was soo easy and good! I didn't have sage, so I used Thyme and it still tasted wonderful! I also used some fresh rolls because the store was out of french bread. I made the mixture the night before I actually used it so the flavors could really meld together. There were no leftovers!

Baby Back Ribs

This was such an easy way to make ribs. It was my first time making them at home. I did bake them for the specified time. However, after adding the BBQ sauce, I cranked up the heat to 350 and baked for an addional 30 mintues. The sauce was nice and thick and sticky...just they way we like it! And the meat did fall right off the bones!

Chewy Coconut Cookies

All I have to say is that these cookies are AWESOME!!! I added 3/4 cup of chopped pecans. And I used 3/4 cup of brown sugar and only 1/4 of white sugar. I used sweetned flaked coconut because that was all I had and did not find that the cookies were too sweet. My cookies stayed in the oven for about 15 minutes. The first batch I only left in for 13 minutes and found them to still be a bit too soft. Next time I make them I'm going to add butterscotch chips! YUMM!!!!

Mini Meatloaves

My family loved this recipe. I made it for the first time last night. I did not make any alterations to the recipe at all. I have made made meatloaf many times, but I've never used oats, cheese or milk in mine. I don't think I will make it another way ever again. I would love to add onions, but my daughter doesn't like them. I even made them a night ahead and kept pan in the fridge until ready to bake. This is going to be in our weekly rotation of favorites. Thanks!!

Italian Sausage Soup

I received this recipe from a friend about a year ago and have made it many times. My 5 year old helps me chop the veggies all the ingredients together. She loves to eat the soup because she helps make it. I usually use turkey sausage. And I just buy the bagged spinach in the salad section. I don't even tear or chop it. I just dump it in! We sprinkle parmesean cheese on top before serving. YUMM!

Red Velvet Cake III

I have never had any other Red Velvet cake, so I don't know what to compare it to. But at any rate, THIS IS SOOOO GOOD! I did make a few changes suggested by other reviewers. I used 4 tablespoons of cocoa, one tablespoon of vanilla, and two 1oz bottles of the food coloring. I also used the moist yellow cake mix. I didn't have time to make the icing, so I used a store bought whipped cream cheese icing. I put some chopped pecans on top. It was wonderful!
