Banana-Chip Oat Muffins

These were fantastic and a huge hit at my office! I followed the recipe exactly and had no issues at all. The second time I made them, I realized I didn't have any applesauce, so I used pumpkin instead. They still turned out great! My recommendation to the last reviewer who thought the chocolate was overpowering would be to use regular size chocolate chips and not the mini ones. Any maybe use less of them. For the flavor, it's really important to use the over ripe bananas. it makes a world of difference.

Penne and Vodka Sauce

Excellent recipe! I substituted hot italian turkey sausage for the pancetta after finding out that whole foods was out of pancetta. it still worked out great. the recipe is supposed to make four servings but it's really more like 6 unless you want ginormous servings. definitely add some crushed red pepper!

This recipe was almost perfect. I took another reviewers advice and squeezed out some of the liquid before I peeled it. I also added extra lemon juice for a tangier flavor.

Broiled Tilapia Parmesan

This tilapia was a big hit with my fiance. It has a very nice flavor. My only complaint is that the sauce was not very thick and and ran off the fish as it cooked. It worked out ok in the end when I just poured the sauce over the fish on the plate.

My Kid's Favorite Pork Chops

Warm Flourless Chocolate Cake with Caramel Sauce

This cake was FANTASTIC! It was extremely easy and turned out just as I had hoped. I couldn't find my springform pan, so I used a regular cake pan sprayed with cooking spray. I didn't bother with the homemade caramel sauce, I just used the store bought stuff. I served this for a dinner party with vanilla ice cream and caramel sauce and it was a HUGE hit. THANKS!

Orange Drop Cookies II

I made these for Christmas and they were a big hit with my family. I used margarine instead of shortening and had a problem with the first sheet of cookies being flat and airy. Basically, they fell apart. So, I added more flour and they turned out perfectly. They should look like little drop biscuits. The icing was runny and I had to add more sugar which made it really sweet. But that worked out nicely since the cookies are basically an orange flavored biscuit and a little dry and boring by themselves. In the end, with my changes, they turned out really well and my family very much enjoyed them.

Very Chocolate Ice Cream

I followed this recipe exactly and was very disappointed. It took a long time to freeze and the flavors were off. It wasn't chocolaty at all, but tasted more like a wendy's frostee. that said, i do enjoy a good frostee, so it wasn't too bad!

Garlic Chicken

I have made this chicken many many times and it's fantastic. The chicken stays very moist and the garlic, bread crumbs, and cheese make it very flavorful. I've also used this recipe to make chicken Parmesan. Just follow this recipe and then add some sauce and mozzerella cheese and bake for a few more minutes. You get a healthier, more flavorful chicken Parmesan.

Libby's® Pumpkin Cheesecake

I have made this recipe several times and have had mostly success with it, though I did make a few changes. I found the flavors a little bland, so I added a teaspoon or so of pumpkin pie spice as well as some extra cinnamon. Depending on the thickness of the springform pan, this cheesecake also can be gooey in the middle and overcooked on the outside. I chose to make several small cheesecakes instead. Additionally, I found that a gingersnap crust made this cheesecake even more flavorful.
