Cranberry and Cilantro Quinoa Salad

Love the list of ingredients (minus cilantro). I kicked this up a bit by increasing curry to 3 t. Added 1 t cinnamon and 1 t cumin. Since I planned on having this as my lunch vs a side dish, I added a can of rinsed and drained black beans. Not only was this a delicious meal, it was so colorful as well.

Toasted Garlic Bread

Very good. I cut my loaf in half, spread the mixture on the inside, then wrapped it in foil and put it on the grill for about 15 minutes. I omitted the cheese due to allergies.

Quinoa with Sweet Potato and Mushrooms

I took some shortcuts with this recipe and it turned out really good. I browned the onion & garlic in olive oil, added about 3 t. curry, 1 t. cumin and 1/2 t. cinammon Then I added double the amount of quinoa and water. I let that simmer for about 10 minutes. Meanwhile, I microwaved a sweet potato until it was about half cooked. After letting it cool down, I removed the skin, cubed it and added it to the pan, continuing to simmer for about another 10 minutes. When it was done, I added some slivered almonds (didn't have pecans on hand). While it was still hot, I stirred in about 1/2 c of dried cranberries. Not only was it great tasting, it was very colorful to look at.

Spiced Quinoa

Pistachio Eclair Dessert

This recipe couldn't be any easier and it went over very well at our dinner party. I used 2 boxes of pistachio pudding and took the suggestion of others to nix the frosting and drizzle melted chocolate chips across the top. Definitely better the 2nd day. The only thing that was a bit off was the size pan. I followed the directions exactly and the graham crackers don't quite fill the entire bottom of the pan called for. No big deal, though. I just kind of shoved everything to one side and it worked out fine.

Baked Haddock

This was "ok". The fish were way too soggy on the bottom, even though I followed the baking directions. I'll have to try putting the fish on a rack like someone else suggested.

Roasted Asparagus and Mushrooms

I did not have time to roast my asparagus, since I was packing my lunch for work at the last minute. I simply put frozen asparagus spears in a microwaveable container, sliced mushrooms on top of them,. added diced garlic, drizzled with olive oil and nuked at lunch time. It was fantastic! I will try the roasting method when I have more time.

Onion Dijon Crusted Catfish

I picked up some Swai fish and tried this recipe on it. I was glad I took the advice of others and cut back on the onion. The reduced amount I used was plenty. It was a little too mustardy for my taste, but I'll make it again, cutting back a little on the mustard.

Chicken Divan

I thought this would be a pleasant change from the conventional Chicken Divan I've made in the past, so I made it for a family birthday dinner. When no one offered complements, I knew it was not well received. Once I tasted it, I understood their disappointment. I followed the recipe as shown without adding water chestnuts. Sorry, but I will not make this one again.

Quinoa with Veggies

This was my 2nd experience with quinoa and really enjoyed it. I browned some chopped onion with the4 garlic, added celery, red pepper and broccoli. I sprinkled on feta cheese right before eating and wow...what a great vegetarian meal! Oh, I took someone elses suggestgion and cooked the quinoa in 2 cups of chicken bouillon. 3 cups of water would have been too much liquid.

Ethiopian Cabbage Dish

Oh wow! This is one of my new favorite vegetarian dishes, for sure. As suggested by others, I used only 1/4 oil and doubled the cumin and turmeric. I don't care for cooked carrots, so I omitted those. Instead of white potatoes, I used sweet potatoes. A shortcut is to microwave the potatoes, peel and cut into cubes, then add to the pan.

Buffalo Chicken Fingers

Loved this recipe. I did take the suggestion someone else made about marinating the chicken in Frank's Hot Sauce for a couple of hours before preparing this dish. I also brushed the chicken with melted butter & Frank's Hot Sauce for the last 2 minutes while they finished baking. These were even good reheated.

Baked Scallops

This was the first time I prepared scallops and thought this recipe was ok. I think I might prefer them broiled next time. A number of reviewers mentioned that they broiled theirs and I should have tried that method.

Cathy's Banana Bread

We enjoyed this recipe. I did cut back a bit on the sugar and will probably cute back even more the next time I make it, as it was a bit too sweet. I read that a couple of raters made this in a bundt pan, so I poured the batter into my mini bundt pan and baked if for about 45 minutes.

Make-Ahead Mashed Potatoes

I prepared these ahead of time and left them to keep warm in the crock pot. While they were quite flavorful, the texture was almost soupy. I'm thinking the crock pot added extra moisture they did not need? They did firm up after cooling down, but next time I think I'll skip adding the milk and not hold in a crock pot.

Broccoli with Garlic Butter and Cashews

Very tasty recipe. I don't know why some said it had no flavor, because the broccoli eaters at my table love it. I used slivered almonds because I did not have cashews. Also, I cut back on the butter a little and only used 2T of soy sauce as I was afraid of it being too salty.
