Irish Soda Bread
The only soda bread recipe I have ever used that did not produce a doorstop - it was fabulous! I had to remind everyone that dessert was waiting, or we would have polished it off in one sitting at dinner last night. My only change: 1.5 c of raisins instead of 3, but will use more next time - this recipe can handle it.

Irish Cream Bundt Cake
WOW. SO good, and so easy. as suggested by other reviewers, I used chocolate pudding and added a little whiskey to the cake mix. It was absolutely delicious, and I will definitely make it again.

Corned Beef and Cabbage II
I made this last night for St. Patrick's Day, and it was a hit with my entire family, including my uber-picky husband and 9 year-old son. VERY easy and very yummy. I cooked it in my crock pot on low for about 6 hours, threw in some potatoes for the last three hours, and it came out beautifully. This is joining our regular dinner rotation, by everyone's request.
